My favorite meal so far this summer had to be the vegan dinner at my wedding in June! a summer salad with peaches and almonds and poppyseed dressing to start, followed by the entree of vegan BBQ seitan, mashed potatoes, coleslaw, cashew-creamed corn (I wanted Southern influenced food!) – the BEST meal ever. Followed by the best cake ever: vegan funfetti strawberry champagne cake! I dream about that meal daily… PS- my *wife* and I met you at your book signing in Santa Monica, we weren’t married yet then…

    I love making a lot of cold dishes in the summer. Veganomicon has a really good corn and edamame sesame salad that I like to make different versions of. I also like to make a chickpea “chicken” type salad things as well.

    Happy Summer! In Florida, local strawberries are a favorite of ours, we use them in everything, salads, drinks and desserts! Nothing says summer like a strawberry, spinach salad topped with pine nuts, with a drizzle of balsamic vinegar and olive oil, yum!

    my raw garden salad is always a favorite in our home! heirloom black, yellow and red tomatoes, cucumbers, red onions, red and yellow carrots, red radishes, fresh avocados, baby lettuce and spinach, basil, chives, and spearmint. as the summer passes we get even more vegetables! I love growing my own food! my 4 year old is anxious about his 2nd batch of radishes!

    My favourite summer meal has by far been the Toasted Nori Burritos from The Kind Life recipe section! I’ve found that putting my leftover grains and veggies from the night before into some Nori makes for a great lunch to enjoy on the deck with some cold tea!

    I have been making these delicious cookies for my kids and they LOVE them! The ingredients are organic almond butter, various nuts, dried fruits (I use cherries and raisins), dark chocolate chips, 1 egg, vanilla, and cinnamon. So yummy!

    Hi Alicia! My favorite summer meal I have enjoyed so far this summer has to be the vegan beer battered tofu with vegan ranch dressing! When I was making it, I didn’t have any vegan sour cream so I made my own for the vegan ranch dressing. I am loving my hubs cooking as he shops at our local fresh produce market for organic fruits and vegetables! He chops up veggies and makes a potato, tomato and other fresh veggie bake and it is satisfying as a meal! I don’t know what to call it but its delish!! I wish you all the best and your family!     My favorite summer meal has to be a grilled veggie gyro with a cashew cream cucumber and dill sauce. I love being vegan, but one of my favorite pre-vegan foods was Greek gyros. When I found this recipe on I made it the same night. It hit every craving I’ve had for a Greek gyro and then some.

    My favorite meal this summer was our first bbq of the season which was on July 4th. Apple sage veggie dogs, sweet potatoes, and veggie kabobs. All were perfectly seasoned and grilled to perfection on our new ‘veggies only’ grill. There was of course a kale salad on the side. Enjoying a compassionate dinner on the patio with my husband and fur kids made for a perfect summer night.

    The meals made with love and concern… at the end of a very emotionally trying day, my sweet boyfriend prepared some comforting and light vegan tacos with yummy spiced lentils and fresh avocado. In an effort to not perpetuate the venom that had been passed on to me by a fearful, angry person, I distracted myself by making some Vegetables Provençal with summer squash from the local gardens. When my boyfriend took a whiff of what I had created, he smiled, took my hand and said, “I’m so grateful we eat such great meals with no animals products at all.” It helped melt my distress into mindful thankfulness.

    Last week I spent a week in the mountains of North Carolina with my husband’s family for our annual summer vacation. Being the only vegan in the family (my husband is vegetarian) I was excited to make a wholly plant-based meal for the 10 of us. I made an enchilada casserole (layers of tortillas separated by black beans, white beans, tofu, spinach, and topped with vegan cheddar cheese), which everyone adored. My favorite part of the meal was at the end – after everyone thanked me and said how delicious it was – I announced, “You all ate tofu and LOVED it!!” Also, my nephew told me that vegan cheese is his new favorite cheese!

    My favorite meal I’ve had this summer is a big bowl of freekah with grilled red cabbage, baked tofu, and cold green peas mixed in and a side of beach salad (tomatoes, cucumbers, and onions marinated in evoo, balsamic, white wine vinegar). The best part was the fact that we used the tomatoes and cucumbers from our organic home garden.

    It’s very hot down here in south Florida so we’ve been on a light soup and salad for dinner kick. I recently made a simple roasted butternut squash soup with an apple and an onion I sautéed in Croatian pumpkin oil along with some homemade french bread and a simple radish salad. Two year old vegan baby approved!

    My favourite meal by far was a vegan chilli that I had made with quinoa (made with organic vegetable broth), black beans, sautéed onions, sweet potatoes, garlic, and then any added spices to your liking. It was so delicious and it was paired perfectly with a fresh garden salad from veggies that I purchased at my local farmer’s market. Thanks for your inspirations everyday, Alicia!     I go home every year in July to visit my family and I am known for cooking up a storm in the kitchen and preparing a meal for my loved ones to enjoy. In the past, that included turkey lasagna, beef stuffed shells, cheese enchiladas and crab stuffed mushrooms. But this year, I have been researching nutrition and the body’s relationship to food. My diet has been changing. So I switched up the meal and my mom and I prepared black beans topped with green onions, brown rice, portabella mushrooms, a super fresh, colorful salad, and your Miso soup. It was such a wonderful meal to share with my parents and aunt. My aunt had just gotten over an illness, so the nutrition could only do great things for her immune system. Plus, I got to spend special time with my mother in the kitchen. Thank you!

    Gosh, I’ve eaten so many great things this summer it’s hard to choose. I cook 99% of our meals, but we did get to go out and try the new vegan menu at WaterCourse. I had buffalo cauliflower wings, the BBQ plate with jackfruit, black-eyed pea cassoulet, sauteed greens, and hush puppies. I finished the meal with their key lime pie. It was all wonderful and I was stuffed!

    I have just signed up for and received my first recurring delivery from a local organic produce market so I decided to incorporate the goodies into a summer pasta dish. I used angel hair pasta, olive oil, garlic, broccoli, capers, lemon juice and lemon zest. Added a lovely baguette (from the same market delivery) and it was a wonderful, fresh, summery meal. :)

    My favorite summer meal is grilled marinated tofu and veggies. I’ve fallen in love with grilled Bok Choy this summer! Also a side of quinoa and tomatoes… so good! I try to do most of my cooking outside in the summer. Living in the Pacific NW with no AC makes the grill my lifeline for home cooked goodness in the summer months!

    My family is loving meals served in a large grilled portobello mushroom. Clean out the inside and drizzle with olive oil before grilling. Perfect for serving pasta, salad etc.

    Mine is this salad made up:
    • 2 ears of corn (boil or pop in the oven then cut off the cob)
    • 2 cucumbers (cut up into small pieces)
    • 1 Container cherub grape tomatoes (cut in half)
    • 1 bunch of green onion (diced)
    • 2 cups chickpeas (I cook a dry bag for 3 hours, usually do it the night before)
    • 5 heads broccoli (cut into florets and then steam for 15 minutes)
    • 1 bag of vegan cheddar cheese shreds of your choice
    • 1/2—3/4 cup of a Campaign Vinegarette (depends on your taste buds and how strong you want it).
    • 1/2—3/4 cups vegan mayo of your choice.
    • Toss and refrigerate!

    Tacos! I make all sorts of vegan tacos on warm corn tortillas– buffalo tofu, portabello mushrooms with salsa verde, black bean and avocado, Thai tofu/tempeh/veg with peanut sauce, BBQ tempeh and slaw, lentil & cauliflower, falafel tacos… the list and options are endless! I’m obsessed.

    •1 bag of dry chickpeas (cook in 8 cups of water for 3 hours). You can
    get 2-3 cans to save time.
    • 5 heads of medium sized broccoli (steam for 10 min.)
    • 1 bunch of green onions chopped
    • 1 container of the cherub grape tomatoes (cut in half)
    • I used one bag of vegan cheddar cheese
    • 2 corn on the cobs (I cooked them at 400° for 15 min while I steamed
    the broccoli). Use knife to cut off the Cobb
    • 2 Cucumbers diced.
    • 1/2 cup vegan mayonnaise
    • 1/2 to 3/4 cup of light campaign vinaigrette. Depends on your taste buds and how strong you want it.
    • Toss and refrigerate

    The master cleanse lemonade drink. I know it’s not a “meal” in the normal sense of the word, but it was my only meal for ten days. Although the drink itself tastes good, I picked it as my favorite meal due to the affect it had on my body. The first couple of days were awful, but as my body started to be cleaned out, I felt so light and energetic. It was better than a cup of coffee when it comes to giving energy and better than quinoa when it comes to filling you up. I’m definitely going to do it again before school starts.

    My boyfriend and I have been living at his family’s farm this summer and growing a garden full of yummy vegetables and herbs (with no fertilizers or pesticides!). The best meal I’ve had was from our garden: green beans with sesame seeds and garlic, steamed okra, corn on the cob smeared with umeboshi plums, with a tomato, onion, and squash salad seasoned with lemon thyme, parsley, basil, and lavender. The meal was incredible, but more importantly it was with the love of my life in a healthy and kind environment. Alicia, you inspire me each day and I thank you for everything you’ve taught me!

    My fave summer meal is a 4th of July vegan blueberry, strawberry, & jicama salsa I made for a party, it was made with mostly all organic ingredients (farmer’s market didn’t have organic jalepenos or jicama), & it was a hit! I served it with red & blue organic tortilla chips colored naturally & it was refreshingly sweet & spicy, yum! I rarely make anything fancy or super delicious but this was! 😀

    This is a Super Salad I created when purslane and figs are in season at the local farmers market.

    It’s vegan, gluten-free and sugar-free!

    Purslane is a lesser known plant that is actually a weed, rich in nutrients and full of omega-3s. Complemented with super foods quinoa and goji berries, fresh figs for natural sweetness, walnuts and seeds for crunch, the plethora of tastes and textures makes this salad gojilicious and figging good!

    My favorite summer meal was tonight’s. I began working at my new job today as a supervisor for a dog hotel that solely sells local, holistic, humane products. I have never known what it feels like to be in love with a job and I have never allowed myself to work somewhere so aligned with me. I treated myself to a meal from scratch: sliced, oil fried yukon potatoes simmered in a red curry medley of fresh sundried tomatoes, basil, coconut, garlic, urad dal lentils, onion, and turmeric, all over a cushion of jasmine rice with a side of capers for abundance.

    My favourite summer meal so far has been from a vegan restaurant in Toronto called the “Live Organic Food Bar”. I had their manicotti, which was delicious! I switched to a vegan diet to overcome a digestive disorder. This meal made me feel like I wasn’t missing out – the cashew nut based cheese and plant-based sauces were delicious! I ended with their lemon zinger cake, which had no refined sugar and a very smooth, creamy texture (despite the fact that there was no cream!) Their food made me realize that being healthy or vegan doesn’t mean having to give up on taste. I am now much more confident and optimistic regarding my recovery. :)

    My favorite meal has been homemade cauliflower pizza. I recently bought a pizza stone, and have been using it quite a bit, it was a great investment. I had some friends over and made this pizza for dinner. I piled on all kinds of fresh veggies that I had recently purchased at my farmer’s market and it turned out fabulous. They were begging for the recipe afterwards…needless to say it was a big hit!

    Last night we grilled some homemade sourdough potato bread and topped it with artichokes, hot peppers, and fresh cherry tomatoes and served it alongside a mixed green salad. The greens were from our garden and are so delicious served fresh. This meal is something I will have once a week at least from now on! My husband has planted an amazing garden that we have been eating out of for several months now. Kale, collards, lettuces are ready now and squashes, tomatoes, and eggplant will be ready soon! I am very proud of him and happy to eat the reward!

    Really cold gazpacho followed by amazing cold watermelon. Summer is, by far, my favorite season. Not only because it means longer days, bright daylight, beach days, lazy Sundays on the lawn, but because the orchard by my house is open and full with amazing local fruits and veggies. They carry all sort of vegetables, and August is tomato harvest month! Since I am from Spain, I try to follow my mother’s steps by making gazpacho almost every day. The cold and bright soup is the perfect blend of vegetables and vitamins, and its taste transfer me to my mom’s kitchen in the south of Spain.

    I was finally able to pick a bunch of veggies from my porch garden (yay!) and I decided to make fried rice with my veggies and some others from the farmer’s market. I made brown rice in my rice cooker, then added a little sesame oil and tamari to a pan with the brown rice, asparagus, carrots, broccoli, daikon, red and green bell pepper, red onion, and garlic cloves. It was so delicious, really easy, and super healthy!

    The summer squash is straight from our garden, and I was amazed at how sweet it tasted just after sautéing it for a couple minutes (with nothing else added to the pan)! I’m excited to dig in to this potluck and see what everyone else brought!

    “Eggplant salad” (fake chicken salad)
    1 cup of lightly roasted eggplant – you want it still firm, I cut it in small strips
    1/4 of an onion
    1/2 small tomato
    2 avocados
    1/2 a lime
    Let eggplant cool before mixing with all other ingredients.
    I usually eat this on fresh tortillas.
    It’s super simple and yummy.

    My favorite meal this summer has been the Sausage & Sweet Potato Hash from the Kind Mama book! When I am craving fatty, naughty foods after a long bike ride, this is my go-to meal. It’s so deliciously satisfying, and I get to use the lacinto kale (among other tasty greens!) from my garden. Yummy!

    My favorite summer meal so far was when my mom came to visit me for my birthday. We went to a new vegan restaurant in the city and since it was late, had the whole place to ourselves! The owner took our order, prepared our food, and brought it out to us. It was such a cozy, personal experience. Not to mention it was so fun to get stuffed on food that we don’t eat on a regular basis! Nachos, panini, BBQ “chickn” sandwich. We also couldn’t resist trying one of his giant chocolate chip cookies, and coffee cake. We really went for it! :) The atmosphere was awesome, the company was perfect, and it was fun to indulge in some yummy treats! It was definitely one of my favorite Birthdays, and the best meal of the summer.

    Wow! That’s a gorgeous dress! My favorite meal of the summer was one I had at our local vegetarian cafe that just opened in our small town. They had a vegan cooking class and made millet burgers with pesto. It was perfection… I learned a lot and met a few new friends. A few were new vegans who successful won their battle with cancer after adapting a vegan lifestyle. One lady improved her type 2 diabetes greatly. It was very powerful. I will never forget it.     Lovely dress and necklace! We have been enjoying trips to the garden for dinner and snacks. My favorite though? Munching raspberries from a bush in the backyard with my 15-month old son. Hearing him smack his lips and ask for more saying, “Num! Num!” is a precious memory.

    My favourite summer meal this year has been under a giant cedar tree in my back yard :) I bbq’d a full vegan spread for my carnivorous mom and her wife and my kids and they LOVED it!
    Vegan Burger patties with the works! Marinated tofu skewers (peanut soy marinated tofu with pineapple, green peppers and lime)! Field Roast Apple Sage Sausages with relish, ketchup and mustard (just like being at the fair!) and rosemary olive oil brushed fingerling potatoes.

    The best thing about dinner was the phrase “who thought vegan bbq’s could be this good!”

    It’s nice to showcase the variety of foods that vegans eat …I was super proud :)

It was a couscous salad with carrots, red bell pepper, purple cabbage, green onions, parsley, and a curry vinaigrette. I’ve made it three times so far! The last time I made it with quinoa and it was even better.

But since I have recently become vegan, we have had to rework it together, like most of the meals we make. It has been a really fun, creative process for us.     A few weeks ago for 2 different BBQ’s I wanted to make something. I knew because I don’t eat meat I had to prepare something for myself that I could eat (for that just in case moment) along with everyone else. One of the recipes I made was a Summer Couscous Salad that has apples and currants in it. Not only was it a hit for me but the entire tray was gone because everyone LOVED it! The other recipe I made was your Peach & Blueberry Cobbler from The Kind Diet and OMG that was a hit as well.

    For both I was worried there would be a ton left and I was happy that every last drop was gone.

    My sister moved to Barcelona in June and I was very fortunate to be able to visit her for a few days in July. Apart from having a lovely time with my sister, I enjoyed the city, the sun and the surrounding nature very much. I was very surprised that there are so many vegan and vegan friendly restaurants there. I did not expect this because Spain is well known for its ham and seafood. We went to this place called Veggie Garden and this is where I had a very special (at least for me) and really tasty summer meal. Everything on the menu sounded so delicious that we ordered way too much, but it was worth it. I had a vegan burger with hummus sauce a nice garden salad with avocado. The bread was homemade (so good!) and the burger was made of seitan (they had three choices). As appatizers my sister and I shared grilled tofu with a delicous sauce, typical local bread with tomato and momos (very light, steamed vegetable ravioli) again with a yammy sauce. As drinks we ordered fresh juices which were really fresh and so good. I wish we had such a nice restaurant here in Germany.

    Now, I am sitting in front of a rice-cucumber salad with a sesame-ume dressing which is also very nice and cooling. Grilled fresh corn is also one of my favourite summer dishes.

    I have recently (in the last month or so) discovered cooking with Sesame Oil. I don’t know how I was living without it! My favorite veggie recipe right now is super simple and delicious!

    How to: Put 1-2 tbsp in sauce pan. Grind some himalayan pink salt.
    Add some chopped onion (as much as you like – I use about 1/4 onion because I love it), Chopped handfuls of greens (today I used Organic Girl super greens),
    thinly sliced squash and zucchini,
    some broccoli (I like to use frozen because it helps the veggies to ‘steam’
    sweet peppers when we have them
    small red potatoes thinly sliced (only if my husband is sharing).
    Cover with a lid and allow to simmer for a few minutes. The greens soak up the flavor of the oil and salt and the flavors of the veggies are enhanced. It’s so… yummy!

    Seriously, if you are reading this, please try it. I ‘accidentally’ found something I love and I just cannot get enough. Besides making my taste buds cheer, it only takes a few minutes, so when I’m starving after a workout it’s awesome, it is easy to do and customizable, AND it’s super filling.

    The weather has been beautiful this summer in England and I have been working away from home for months in a different part of the country. I went home to visit my boyfriend at the weekend and he surprised me by cooking me a lovely meal (a rare treat I can tell you!) he surprised me with jack fruit as I have never tried it before and made spicy fajitas. He cooked the jackfruit with peppers, mushrooms, onions and spices. He served it with corn tortillas, avocado, salsa and a spicy BBQ sauce that he made from scratch.     I set out to make a “pasta free” veggie lasagna using vegetables from my garden. I used slices of eggplant and zucchini to replace the noodles and added layers of lowfat ricotta and Pecorino Romano, fresh Italian herbs, garlic, mushrooms, onions, shredded carrots and slices of garden tomatoes. It turned out even better than I had imagined it would. My “meat loving” teenage sons devoured it!

    I work as a kindergarten teacher assistant, so summer time is BUDGET TIME! A couple of days ago I decided to have fun with what I had in the pantry. I was SO excited with the result. It ended up being a quinoa/tofu “salad”. I marinated the tofu in soy sauce and ginger, then lightly fried it in coconut oil. Cooked the quinoa in with my favorite “no chicken” bouillon and added in some red onion, roasted red pepper, broccoli, then a splash of balsamic. My husband and 5 year old even woofed it down!

    I am just starting my journeoy of starting the kind diet/vegan diet I grew up having a mother and grandmother who grew their own gardens;so having fresh vegetables and fruits from my grandmas trees was common in the summer Especially tomatoes and zuchini.
    This being said i recently made my first vegan meal by myself. I made summer squash pasta ( you use lemon juice to ‘cook’it. Its an ancient italian trick for cooking), roasted tomatoes ( small tomatoes, seasoning grape seed oil), farafel corn and green pepper stuffed tomaotes and roasted asparagus. Such a feast and so in heaven!!!

    My most memorable meal this summer was at a greek restaurant in Queens. They are very vegan and vegetarian friendly :) I had almond skordalia (whipped potato, garlic, and almonds) and vegan soutzoukakia (chickpea croquets with hot tomato sauce over a bed of chopped cauliflower).

    My other favorite meals are basically anytime my boyfriend cooks. He’s turkish and makes amazing cold mezzes like stuffed green peppers (stuffed with rice, black currents, spices and walnuts), and delicious green beans, and bulgar salad!

    As you might have guessed, I’m a big fan of mediterranean cuisine!

I’ve also enjoyed making grilled portobello mushroom burgers with sprouts and seasoned with lime and cilantro.     I wanted to surprise my husband’s employees with a nutritious breakfast instead of bagels and donuts. I went to the local farmers market and picked up fresh blueberries. I made vegan, gluten free muffins with a wonderful oatmeal topping with maple sugar and cinnamon. Yum! I also brought fresh watermelon and mixed berries with fruit dip. The dip was made with almond and coconut yogurt, honey and cinnamon. Everyone was singing my praises. Needless to say the food was gone in a matter of minutes. It was my pre-birthday celebration with my dear friend, Becky,and her dad, Wayne. I had their B.A.L.T. sandwich-coconut bacon, avocado, lettuce, and tomato, with a side of kale. Delicious! We shared a piece of chocolate lava cake with coconut ice cream for dessert. It was a great birthday celebration!     My neighbor Mary grows the bombest zucchinis and my husband is as crazy for them as I am. Being 38 weeks pregnant and craving protein, I am leaning into quinoa a lot these days. I make this dish 3 or 4 times a week and it can be eaten hot or cold, thrown over a bed of greens or on its own:
    My husband grills the zucchini which are rubbed in olive oil and sea salt and sliced 1/2 inch thick. I stir olive oil, Herbs de Provence, sea salt, and chopped onions into a simmering pot of quinoa.
    When the zucchini are grilled to melt-in-your-mouth perfection, hubby chops them up and into the quinoa they go!
    It tastes so gourmet but takes only 10 mins to make if you team up. On a rainy day just do the zucchini on a pan next to your quinoa, it’s still quick and amazing.

    I love this question because I have a super fun meal story to share! I decided to try to have a little summer romance, and started seriously dating again for the first time in 3 or so years. It’s kinda hard and scary putting yourself out there! But I met an adventurous and sweet non-vegan man who is extremely open to veganism and actually made me a gourmet vegan dinner for our second date! He made a beautiful mixed greens salad as an opening course with shaved fennel and orange pieces in a balsamic vinaigrette with rosemary. Then for the main course, a turnip and carrot mash with miso caramel reduction sauce (!) and grilled baby bella mushrooms, done just right! Then he actually made chocolate coconut ice cream with real coconut bits!!! It wasn’t exactly superhero fare, but it was so, so sweet and such an amazing and impressive effort at gourmet-quality vegan food. And it’s got to be my favorite meal I’ve had all summer!

    Every Thursday I am part of a meditation group that meets at a friends flower garden. We follow it with a vegan lunch. Recently we had an amazing kale, warm barley, and pine nut salad. It was also served with a quinoa, edamame, and corn dish complemented with a chia and flax bread topped with Earth Balance butter. Just beautiful and so were the flowers and friends! I am a vegan and “The Kind Diet” really helped me on my journey in veganism and took me to a whole new level. I just got “The Kind Mama” today and already can’t put it down.     My favorite meal this summer has been coconut curried veggie chunks, Jamaican Ital style! My children and husband love them. Its easy to make. I season the water that I cook the chunks in and let them sit for a few hours to soak in the flavor of thyme, curry onion and scallion. Then drain them leaving some of the stock for cooking. Saute’ onion, scallion, scotch bonnet pepper carrots sweet peppers potatoes then add the chunks and curry with black pepper and lastly add the coconut milk to simmer lightly. Any veggies are great with this dish, even add Chayote/ChoCho. Very delicious with brown rice or mashed ripe plantain. I think I will make this tomorrow :)

    I made the best summer salad last night! Spinach, carrots and cucumbers topped with fresh strawberries, blueberries, mango and toasted coconut. I then used Bragg’s Organic Hawaiin dressing & marinade. I usually make my own dressing, but I found this dressing at the store and it was calling me! It was so simple, fresh and delicious. Tasted like a tropical vacation!

    I recently tried my hand at simple fried tofu. I made it into small 1/2″ squares, added some sesame oil for flavor. The main dish was udon noodle in a dashi and soy broth. I had mixed in vegetables from my garden such as spinach, arugula, peas and carrots. It came out pretty decent for my first time making it, I was quite proud of my efforts.

    The most magnificent and wonderful thing I was lucky to enjoy so far this summer was: mixed baby lettuce with “fresh juiced” curry & roasted peanut vinaigrette, topped with a coconut cutlet from Field Roast and finished with some napa cabbage, grapefruit and mint. So fresh and lovely. I love the dress & necklace, thanks for being so kind!

    A summer meal I’ve made several times is Marinated Portabella with Sauteed Kale. Marinate 2 portabellas in a mixture of honey, apple cider vinegar, olive oil and sliced garlic. Leave on counter all day and then in the toaster oven or a grill roast the portabella with the marinade. The marinade will caramelize a little bit. While roasting, saute thin slice kale in coconut oil or olive, organic herbs and red chili flakes. Serve kale atop the portabella. very delish and satisfying. And i chop any leftover mushroom to have over quinoa the next day for lunch! Love your kind life website! =) Melissa

    Recently this month I made a dinner for my mom, dad, little sister, and two little brothers who are 5 and 9. We had black bean and quinoa veggie burgers on sprouted grain buns, with fresh cucumber slices and yellow and orange bell peppers! Dinner was great and my little brothers really liked them which is a good this as my mom and I are trying to incorporate good vegan meals for them. God bless!

    I had the best big salad a few nights ago with lettuce, broccoli, black beans, fresh corn, red peppers and an olive oil, lemon and mustard vinegarette! It was amazing!

    I just went to Crestone, Colorado (you should go, you will love it!) and everybody was so environmentally aware and so health conscious that it was an amazing experience. My best friend and I went to the Crestone Music festival and instead of eating whatever we prepared quinoa and massaged kale (with olive oil, lemon, and garlic) and ate that the whole weekend, it was so uplifting and energizing. I am back at work right now and eating the same thing again I love it so much!
