    I am all about simple, fast (but still delicious!) vegan meals. My go to lately has been a very easy Indian dish made using a canned coconut milk base, seasoned with cumin, curry, turmeric, salt, and pepper. I then throw in whatever veggies sound good that I have on hand (chick peas, spinach, sweet peas, onions, and mushrooms are a few of my faves!) I spoon this deliciousness over some jasmine rice, and include a piece of naan for scooping it up (Trader Joe’s has a vegan naan that is perfect)!

    i was given a free Halva tahini bar at whole foods today , it was a common dessert we had as kids in Russia, still communist then, there was not much variety of food. yet tasting this today gave me such enjoyment and excitement ! it was a delish treat for post mother day 😉

    Hi Alicia! My Mom is here in Los Angeles visiting from New Orleans and she wanted me to take her to Chinatown to eat at a place called Burgerlords. I was very skeptical about their vegan burger but it was actually amazing! It was made with eggplant, barley, and lots of other yummy ingredients. It was by far the best vegan burger I’ve ever had. If you haven’t had one, it is definitely worth checking out! It’s great for those days when you feel like having something a little bit naughty! I hope you have a chance to try one!     The most delicious dish I’ve had is a vegan pad thai from a local restaurant where I live. We don’t have a lot of options here in the south, but it seems when I find a restaurant that does, they knock it out of the park!

    Yesterday my brother-in-law made us mothers a special meal that was just that, insanely delicious! Asparagus and green beans , smashed potatoes and a creamy dill horse radish.I have always steered clear from the asparaguys because of a bad woody experience so I was blown away at how awesome theese were! And for desert we were served strawberry,pineapple,coconut pie and a pecan pie that was like eating a candy bar! With fair trade coffee of course!

    Tofu and broccoli in peanut butter sauce over jasmine rice. Could not get enough! Just took the leftover jasmine rice (yes it was a week old!) and fried it up sweep-the-kitchen style with every veggie I had in the fridge for my lunch today. Yummy :)

    We went to Crossroads last month for my birthday. It was my first time there and so amazing! We shared plates so I was able to try a bit of Kale Spanakopita, ‘Crab’ Cakes, Spinach salad, Lentil Flatbread, Charred Ricotta and the Spicy Meatball Pizza. It’s rare that I can eat everything off the menu, so this was a special treat. The ricotta was my fav! <3

    The most delicious meal I’ve had recently was just now, at a Free Food Market in downtown, Portland. I hadn’t been able to eat much at all yesterday due to some GI pain and nausea, and had decided to go and stock up on bounty available to the community, when I tried a brown rice, black bean and corn salad that was just amazing.     The best vegan meal I’ve had lately was a Beyond Burger I cooked for too long in the pan. It was the best (despite its burntness) because I shared the meal with a meat-eater who loved it. I dare say he was astounded. And to be clear, Beyond Burgers are delicious even when I cook them badly. :)

    Happy Belated Mother’s Day Alicia! Being a Waldorf homeschooling mother of a 6 yr. old (Winter), I especially love seeing your posts of you & Bear. My insanely delicious Mother’s Day meal was at Kalm Bistro in Gray, Tennessee (if you’re ever in the area). I order the Pho Chay. Rice noodle in vegan broth, steamed tofu, topped w/chopped scallion, sweet onion, & cilantro. Garnishing include Thai basil, culantro, bean sprout, jalapeno & lime. It was extra delicious because they had been on vacation April 23 – May 10 and I missed them (I eat there at least once a week). Much love. ♥

    My daughter would love this!
    For mother’s day I made vegetable Wellington. I was a huge meat fan before and this really satisfies! No one knew the meat was not involved.
    I paired it with almond green beans and vegan Mac and cheese ( I used vegan cheese). Best meal ever! I also made ‘ice cream’s using almond milk and strawberries.

    AVOCADO TOAST!!! The addiction is real! Specifically, avocado on Berlin Bakery’s Whole Grain Spelt Bread, topped with pink Himalayan salt and fresh pepper! Sometimes I add tarragon or crushed red pepper. I also recently discovered Kite Hill’s almond milk cream cheese!! Amazing. I love breakfast. Thank you for being awesome!

    I went to this vegan,spot called No Bones Beach Club and they had a Taro sandwich that was phenomenal! Never had taro but it rocked and they serve everything with a slice of pineapple. So delicious!

Almonds, apple slices and 4 grapes. unfortunately I had to spend Mother’s Day at the childrens hospital with my 13 month old baby and we are still here. Cafeteria here doesnt have lots of options.     I’ve been trying to eat more veggies so lately I’ve just been eating a kale salad massaged with lemon with carrots and tomatoes for a snack and for lunch I pan fry with water broccoli, carrots, onions, bell peppers, bean sprouts drizzled with sambal sauce and soy sauce which is so yummy with either a side of rice or a potato or by itself!

    The most insanely delicious meal I’ve had recently would be the wraps my husband and I had for dinner. We each used two FlatOut Light Original flatbreads. I filled mine with: mayonnaise, mustard, lettuce, tomato, Swiss cheese, sweet pickle, and avocado. They were almost too stuffed to roll!! Just proof that vegans and vegetarians can eat healthy, hearty meals!!

    Hi Alicia! My name is Zoe and I am 16! My mom is from the Middle East and last night she made a dish that her mother used to make! The sauce is the main part of this dish, it is vegan and it’s main ingredients are rhubarb, turmeric, onion and garlic! This sauce is then placed on top of basmati rice! The taste is so delicious and unique!

    Hi, Alicia! Last night, I visited a local grocery store operated by an Iraqi family. The kind owner, an Assyrian, offered me a plate of vegetable dolma his mother had cooked. In Turkish, dolma served without meat would be labelled as “fake.” Despite the name, it was anything but… It was the most scrumptious meal of the week!

    I always feel happy in the soul like a little child when having healthy and homecooked food at school so since i’m going to highschool, i’m mostly having vegan meals with lots of vegetables but also a side dessert when being at the end of the week. Today (16th May) i ate a wooked soup with vegetables and some grain bread with chickpeas spread. It was delicious and couldn’t ask for anything more.     The most delicious meal I had lately was last night and it was actually very simple and something my mom made for me. A three bean soup from th4 hot pot, made with vegetable broth, kidney beans, black beans, and cannelloni beans along with some sauteed onion and fresh vegetables from her garden-broccoli, carrots, zucchini. It is filled with fiber and protein, so good and I had it with some crackers on the side-by-side and a few red chili flakes on top for a little spice! Will be perfect to have leftovers tonight for me and my husband on this rainy New York day.

    It’s a chilly rainy day here in the Bronx today and me and my 2 year old made an insanely delicious vegan soup in our insta-pot. It’s my version of “African peanut soup”. It has sweet potatoes, carrots, red peppers, red lentils, ginger, collards, kale, leeks, spices, tomato paste and a generous helping of peanut butter. We blended it up and it was cozy and delicious. Sharing it with my little buddy made it extra yummy of course.

    I love to eat at “Whole Earth Center “ market in Princeton, NJ. They make the BEST garlic tofu I’ve ever tasted and their kale salad is SOO good you forget that it’s healthy. They also make their own homemade hummus and guacamole. Every day is a different menu so you never get bored with the same foods.
    Best of all though I get to feed my toddler there too and give him healthy and delicious foods now so when he’s older he’ll appreciate wholesome, tasty, vegan food!!
    Anyone who’s going to be in the New Jersey area has to go to this place for lunch, you won’t regret it!

    I made vegan gyros for my family and some non-vegan friends this weekend. Everyone loved them. They were sooo good, my husband can’t stop eating the leftovers! I said, can you please stop gorging on my shawarma?! I just heated up some chickpeas with some shawarma spice blend and filled gyro bread with them, along with lettuce, tomatoes and tahini garlic sauce with dill. I served them with roasted potatoes and a cucumber, onion and bell pepper salad. Delicious and didn’t harm any cute lambs! I love the shirt and pants and they are my size. I just finished a year of buying nothing and they would be a great way to celebrate. Glad you are demonstrating that second hand is not second best. In fact, it’s a great choice! xo

    The best meal I had was one of my husband and my favorite spots in Vegas, but also it was because of the experience. I finally got my family to come eat vegan with me, my Dad included, which was the real shock. He is completely against veganism and is very picky in general, a very Midwest meat and potatoes kind of guy. We went to a Chinese restaurant called Veggie House and he loved it. He even went a second time with us, and this time instead of sticking with just veggies he ate the General Tso’s chicken which is made with mock meat. What a day!

    The most insanely delicious meal that I had recently was at Gordon Ramsay’s Pub in Ceasars Casino Atlantic City. I had the vegan cauliflower steak with fingerling potatoes. YUM!

    The best meal I have ever had was probably at the Wild Cow in East Nashville. We started with vegan buffalo tempeh for an appetizer then moved on to black bean and sweet potato tacos topped with lime slaw, homemade jerk sauce, and toasted pumpkin seeds all on gluten free corn tortillas. As far as a vegan dessert goes, I would have to say it is my cashew “cheesecake” with a date and pecan crust topped with chocolate sauce and fresh strawberries. My husband prefers the chocolate version of the “cheesecake” but I like the original.

    OK, don’t want to brag here, but most of the food we eat is insanely delicious! We can’t afford going to restaurant often but do enjoy our homemade vegan delicacies. I really became a vegan master chef for these 4 years after adopting plant based diet. Here I want to share my two dishes which I made recently and they were complete success; surely going to be in our frequent menu. They are simple, rustic, nutrient and delicious!
    The first dish – stuffed cabbage leaves with quinoa, onion, carrots, turnips and squash. Prepare cabbage leaves by tendering them in simmering water for couple of minutes (don’t boil). Prepare stuffing: chop all veggies, combine and mix all the ingredients I listed earlier, add any spices you like. I always put generous amount of ground coriander and turmeric, bit of salt and pepper, I also add cayenne, chopped garlic, parsley and paprika. In the pot add 1,5 cups of water, pinch of salt, couple of bay leaves and if you wish make sauce richer, add one table spoon of any vegan tomato paste. Stuff each leaves with prepared mixture, putting 1,5-2 table spoons (depends on size of the leaf) in the center and making an envelop. Stack cabbage leaves in the sauce cover and simmer on low for 1 hour or until rolls are tender. I don’t boil them as I want to keep enzymes intact.
    1 medium head cabbage and you also can use kale or chard
    3 cups of uncooked quinoa
    1/5 medium turnip
    1 medium carrot
    about half of pound squash
    1 onion
    couple cloves of garlic
    spices by taste

    The second dish – sweet potato pancakes.
    I used 0,5 cup of sprouted whole wheat flour and 0,5 cup of oat flour
    1 Tbsp coconut sugar
    1/4 cup desiccated coconut flakes
    1 tsp baking powder
    pinch sea salt
    pinch of tumeric
    1 cup non-dairy milk. I used cashew milk
    2 tbsp of coconut oil
    3/4 cup finely grated sweet potato (squeeze to remove extra liquid)
    pinch of freshly grated nutmeg
    Combine dry with wet ingredients and make a batter. Pre-reheat skillet to medium heat, grease the surface with coconut oil. Cook on both sides until golden brown. I served them with forager cashew yogurt and herbal tea with lemon.

    A raw strawberry vegan cheesecake I made at Mom’s day that turned out as delishh! And to all my vegan friends out there, don’t be afraid to experiment and create and share.To those who is interested in the recipe, here it is.
    1 cup of almond meal
    1 cup of raw oats
    1 cup of pitted dates
    2 tbsp of cinnamon
    1tsp of maca
    1tsp of hemp seeds
    1 tsp of lemon zest
    3-4 tbsp of coconut water
    3 ½ cups of soaked raw cashews
    3 cups of fresh strawberries
    ½ of mashed banana
    3 tbsp of lemon juice
    2 tbsp of cinnamon
    3 tbsp of maple syrup
    4 tbsp of coconut water
    1/3 of a cup of coconut oil

    1. Soak cashews for 24-32 hours, drain them.
    2. Process crust ingredients with a blender until creating paste.
    3. Blend all filling ingredients, except for 1 cup of strawberries until smooth.
    4. Layer crust into a springform pan or any tart pan.
    5. Mix the last 1-cup of strewberries with the cheesecake filling.
    6. Then pour your filling into the springform pan. Top it with any your favorite berries.
    7. Freeze for 6 hours. AND 8. Enjoy!

    I had an interesting question but I wasn’t sure where to post it.
    I’m about 4 months pregnant now, I’ve been vegetarian since I was 8 so about 20 years now and vegan for the last 5.
    I was planning to get my placenta encapsulated but was also looking into having some placed into a smoothie for immediate consumption after birth, since encapsulation can take a few days.
    I was worried about, will just body break down and digest the placenta?
    I know from a few accidental meat slips in the past 2 decades that my body just can’t digest meat and I will just immediately expel it.
    But will I be able to digest my own placenta in a smoothie?
    I know quite a bit off from this discussion but I wasn’t sure where to post it and wanted some help from some Kind Mamas!
