
When I was in New York filming Gods Behaving Badly, I needed a quick meal. I was rushing to rehearsals, so I went to Japanese-vegetarian restaurant Gobo, and had the Seitan Kale Special. It came with rice and seitan, and the kale was delicious.
I also went to Whole Foods in the village for a couple of other yummy treats...a really good split pea soup.

I used to live right near Gobo, and miss it SO much!! It's definitely one of my favorite restaurants.

Okay! So a great winter soup that I created out of just stuff in my house:
minced carrots, celery, parsley and dill (onion and garlic if you want) (2 c carrots, 4-6 stalks celery, dill and parsley 1/4 c each minced)
I actually used a chopper for the veggies but a food processor would work
Sautee veggies right in a soup pot in a little earth balance butter or olive oil
when tender add:
dill and parsley, 1 can corn kernels (drain a little first)
1 can black beans (drain a little first),
1 can organic pumpkin (without any spices- just pumpkin)
2 cups water,
1 tblsp nutmeg,
1/2 tsp salt or adobo
1/2 tsp black pepper
Let that all simmer for about 15 min
Turn down low and let cool a little before adding:
2 cups soy or almond milk (makes it nice thick and creamy)
YUMMMMM!!!!
And because I'm from the south I like to make cornbread hoe cakes to go with it using earth balance butter or veggie shortening, almond or soy milk and a little applesauce instead or the egg
As I fry them up, I put a few drops of hot sauce on each one :o)

i love gobo! there is one near my office. my favorite meal fix has been squash lately. just throw it in the oven & its done!

There are some local Vietnamese noodle places that will prepare any dish using tofu instead of meat. And I always make sure to ask them to use a veg broth, too. The food is inexpensive & quick. I'm also a big fan of the daily soups @ WF, some of my favorites are: Black Bean, Turkish Lentil, Vegetable & their Mushroom Barley (loooooove this one!)
For quick at home meals, my go-to are tostadas or soft tacos. For breakfast it's a p&j w/a green smoothie.

Right now, it's Vegan Mac n' Cheese(not super hero but awesome none the less) Vegan Creamy Turnip soup(very superhero) and Mock Tuna made from your recipie Alicia! I always have a block of Tofu and some Romaine, Kale and Broccoli in the fridge:)

I am loving mock tuna sandwhiches. I found the recipe on It Aint Meat, Babe, It's a Vegan World, and they are increditble. I add roast bell peppers and artichoke hearts to make them extra scrumptious. Of course, i always have hummus in the fridge.

I recently became obsessed with mediterranean food, there is a great fast food restaurant called Garbanzos right down the street, you can fill a plate with hummus, veggie salad, babaganous, pickled radish, falafel, and many many more delicious options, and they are all marked either, meat or vegetarian or vegan so you don't have to guess! Their Mediterranean Lentil (100% vegan) soup is my new fall favorite!

I have been experimenting with vegan recipes for a few months and I am now on day 3 of my full transition. I always try to have some brown rice made in the fridge. When I need something quick I just add some frozen veggies, seasonings and heat.

I've made this Pineapple Fried Rice twice in the last two weeks! I use brown rice and leave out the egg of course. It's great!

Mana on the upper west side!! The Mana Bowl is worth trekking through the park from the upper east side at LEAST once a week for. Plus, the "Caesar" salad is super delicious too....and they have a really great simple plate with brown rice, the daily bean, and sea vegetables. This place rocks. -
I love to steam cauiliflower and drizzle olive oil over it that has been simmering with fresh garlic in it. Oh so good!!

Cauli-taters -- Cauliflower and mashed potatoes, although you can skip the potatoes if you don't eat them, or use as little as you want. Cook til soft, smash together. (I always buy small golden potatoes in the expensive small bags so I don't use that many. They're a treat, not a staple. And I love the skins.) Top with nutritional yeast and toasted sesame seeds. Had that and some dry-stir-fried pea shoots with garlic for lunch (Dry fry: use as little oil as possible, maybe a teaspoon, then use pan spray to finish cooking)

I have been having a great time experimenting in my kitchen since I'm only on day 8 of my vegetarian to vegan transition. One simple (side) dish that I've fallen in love with is mashing together a bunch of vegetables with a smidgen of Earth Balance. I got this great bag of heirloom vegetables at the market this week--some I had no idea what they were and had to look them up--and I just had a great time chopping a couple root vegetables up. So delicious. So simple. And a great addition to my scrambled tofu.

Well, I'm here in CT still without power with that crazy snow storm! So haven't been able to eat my usual snacks and meals. However, I had some left over sweet potatoes and so I made one of my fav snacks..take mashed up roasted sweet potatoes, add some peanut or almond butter, cinnamon, and some cocoa powder...perfect afternoon pick-me-up:)
