The son of cardiologist Caldwell Esselstyn (you may recognize Dr. Esselstyn from the film Forks Over Knives), Rip was raised on plant-based food and was a professional athlete before becoming a firefighter.

It's the way forward! A fantastic book and a way of eating which everyone should at least attempt to follow for the best part of their life! The health benefits of a plant diet are just too good to miss out on! -
This book shares how Rip helps friends & coworkers w/their diets & compares their before & after results. I noticed he uses a little vegetable spray for a few recipes, but otherwise no to little oils. He presents a convincing explanation of why we shouldn't use so much & after reading the book i'm more conscious of the amounts i use. My favorite recipe is his Mac 'n Not Cheese recipe. It's not only tasty, but easy to prepare & the ingredients are easy to find. And the best part is that it doesn't use fake cheese. Omni husband likes this one, too. -
I read this book and met Rip at a Forks Over Knives premier event. I've met many books about the science behind an optimal diet and weight loss since going vegan. According to the science the secret to weight loss appears to be avoiding carbohydrates that are absorbed too quickly: sugars, flour, modern grains, processed foods etc. The secret to optimal nutrition appears to be to eat lots of plant based food. Also modern animal products tend to be a poor quality - factory farmed animals are essentially raised on junk food leading to an absence of nutrients and poor omega-3/omega-6 balance. And animals tend to concentrate environmental toxins in their fats.
So overall a whole food plant based diet (with B12 supplementation) appears to offer the best diet for weight control, health and longevity.
And yes it's the quality of the food not the quantity of the food that matters for weight control - when your insulin levels are not being spiked by the food you eat your natural homeostatic systems will maintain your weight though metabolism and appetite. -
My husband had been wanting to lose weight, and I knew that going vegan had been life-changing for me. So I left this book laying around the house where I knew he would pick it up. Guess what? He's now vegan and healthy and loving it! Rip is such a great example - especially for men who want to get healthy and go vegan while retaining that oh-so-important masculine identity. -
Rip is the third generation coming from a distinguished father and grandfather. His father is Dr. Caldwell Esselstyn, Jr. of the Cleveland Clinic has the most impressive track record of reversals of cardiovascular disease than any other researcher I've discovered including Dr. Dean Ornish. He recommends a plant based diet very low in refined ingredients and oils/fats. Rip's grandfather studied how medical treatment is influenced by money. Rip and his father were distinguished world-class athletes and vegans.
If you want to improve your health, get this cookbook and stop eating excess salt, sugar, fat/oils, flavorings, and additives. -
I became vegan after reading the China Study 7 years ago, and Rip's book gives me a great way to share my healthy whole foods plant-based diet with others. I love making Rip's plant-strong 3-Bean Chili - full of apples, mushrooms, corn, seasoned with Dijon mustard and blackstrap molasses. This is a great book.He's so right on on many issues too.
I have tried and enjoyed many of his recipes. Loved his ultimate bowl of cereal. His SNACK is a manly meal (for a lady), but I did the mix in a small bowl size and it is really sustaining and quite tasty. I had to try it cause it was so different than my regular bowl of 2 or 3 mix-ins. I truly recom'd this book! -
My oldest son, who has been vegan almost 2 years now and is a nationally ranked competitive sabre fencer, loved the part in FOK where Rip climbs the fire pole, arms only, chanting "Real men eat plants!" Living in Texas, with Texas palates, we love this book and have been using it for almost 3 years now (which is how long I've been vegan). A lot of simple recipes and quick fix meal ideas make it great, but more intensive ones like the veggie enchilada casserole are our favorites. -

I have this book (a few times over as I keep lending it out and not getting it back), and I love it. I bought it for my son, but he won't even read it! :( -
I just watched "Forks over Knives" for the first time a few day ago and Rip looked awesome. I certainly wouldn't mind my Man following his lead, lol!
