If you’re looking for an easy, delicious snack that travels well, try mochi. It’s so great, and you can make it quickly at home. It’s Bear’s favorite food! You can find it at Whole Foods and other health food stores in a package and follow the recipe in my book (pg. 237). It takes one or two minutes to prep and you can walk away and do something while it cooks…so easy! Then, you can take it in the car or train or just eat it from the pan!

Lately I’ve been doing this savory version….
Pan-Fried Mochi (a twist on The Kind Diet’s version)
Ingredients:
1 package unflavored mochi, cut into 1” x 2” rectangles
¼ sheet nori per serving
1 Tbsp. Sesame Oil
1 Splash soy sauce
Instructions:
1. Cut into small pieces, as in the picture above. Toss the mochi into a pan with a little sesame oil on super low heat. Cover it.
2. After a few minutes, 3-4, or as soon as it looks like it’s starting to puff up, turn it over and add a tiny splash of shoyu and water. I use about three drops per piece of mochi and add to some water – just a little - and then I put that on top of each piece. Cover again for 2-3 minutes, checking to make sure it doesn’t burn. Look for it to get puffy, then when it’s puffed, take it off the stove.
3. Wrap it in nori…delicious!
I can just grab this and run out the door. It’s my version of a pop tart! It makes a great snack on the go.

my kids and I tried your mochi waffle recipe and it was yummy with maple syrup. very different from anything we've eaten. we were a little hesitant at first, intrigued and before we knew it had eaten it all up! -
I absolutely LOVE pan-fried mochi! I first tried it after reading about it in The Kind Diet, and I like to season it with Bragg's Liquid Aminos and grade A maple syrup. Delicious! -
one of my favorites. i did some diy experiments which were not bad.
but of course ready made mochi is stressless!

It's much better for one's health to skip the oils, line a pan with parchment, and bake the chunks in the oven according to the instructions. Oil destroys cell walls, and we should avoid refined oils at all cost. -
I love mochi! I normally microwave small portions and cover them in a dab of Earth balance and a little brown sugar. Any suggestions for cutting them? The flat block of mochi is really tough to cut through with a knife...
