Oh goodness I LOVE reading everyone's ideas!!! I am a very new baby vegan. The change for my life was really simple actually. We are expecting! So I made my appointment for the doctor and a week later was horrified to see that my iron was low and my weight was up 7lbs! I came home with a strong determination . . . to relearn what being healthy means. As I started becoming educated more and more items were evicted from our cupboards and fridge. The last thing I ever expected was to become a vegan. I was the first one to smother something incheese or make it bacon. And with all the crazy food aversions from being pregnant I never thought I could do it! But shockingly enough I can do it!! The benefits went waaay past health. I have not gained a single pound (I'm only 13 weeks - no additional weight gain is great right now), and my iron is perfect. What I did not expect was the changes in my home life. My husband, daughter, and I have so much more energy to take walks together. My daughter and I prepare meals together rather than just throwing something together. Cooking food that is nourishing my family is such a wonderful feeling. It has been really fun bringing our fresh healthy dishes to our holiday family functions. Easter (the celebration of eggs lol) was a challenge, but we won the crowd over with our tofu frittata. So for Memorial Day, we are having friends and family over for a BBQ. Instead of hotdogs and burgers, we will be setting up a yummy veggie shish kabob bar. We are going to have a mass variety of skewer friendly veggies so people can build their own kabobs. I haven't got all the side dishes figured out yet but reading these comments I am getting some awesome ideas!

My aunt Pat used to make some pretty kickin' potato salad. I would love to make a vegan version (and track down her recipe!) I adore Nayonaise, so I'm sure that would be in the recipe.

My hubby and I switched to a vegan diet last fall, so this is our first summer eating a kind diet. It's been such a fun challenge to experiment in the kitchen with new recipes, and I'm excited to try some for BBQ season.
Topping my list are:
VEGAN DEVILED EGGS: deviled eggs bring back so many memories of family get-togethers from my childhood, so it's a total comfort food dish for me. Being 6 months pregnant, having yummy, nutritious food at summer gatherings is especially important to me this year, and I'm so happy there are communities out there like this to share great ideas. Thanks, everyone!

Well it's not really BBQ, and it's already something I've veganized, but pad thai. This semester I studied abroad in New Zealand and for the first time had a kitchen where I could make my own meals. Everyone in my flat was either vegitarian, vegan, or GF (which was great because I had never lived with another GF-er) and we cooked meals together a lot. One night I was craving pad thai so I took to the web to find a recipe. I fould quite a few and so sort of played around with ingredients and the final product was amazing!! All of my flatmates loved it and BONUS it was vegan AND gluten free! First meal I've ever really cooked by myself, (well first real meal, i've made pasta before... I'm a college student!). My mom will be so proud, haha. Can't wait to get home and create more vegan dishes :)

Hi kind people!
Here in Brazil we don't have a bbq season as you are used to in USA, but when it's sunny and hot we like to have fun out and do churrascos and feijoadas, they aren't naturally vegan but we veganize them, a feijoada consists in black bean cooked with potatoes and carrots, then we add vegan sausages, Tvp, fried seitan and seasonings. It is just delicious, we eat feijoada with white rice and kale cut in a Chiffonade way. This is one of the most famous Brazilian dishes and it has a history from the time of slavery, now in this vegan recipe we celebrate not only human freedom but animal freedom too. Hope you like it and try it!

We've been eating vegan for a few months now, but I just found out that I'm allergic to gluten and yeasts, so no more nutritional yeast for me. Boo! I would love to find a substitute that resembles it. I'm sure my hubby would love for me to find a non-yeast based Vegan mac & cheeze!
For BBQ season, we love to go with kebabs or throwing some halves of potatoes and squash on the grill. Yum! Recipes for vegan burgers that will hold together on the grill would be great!

My family is doing a vegan experiment this summer - taking 6 weeks to go meatless then 6 weeks to go completely vegan - so I'll need to veganize everything :-) I'm excited to see how we feel, what has changed, what my health looks like (I got a full physical and blood panels before we started so I could compare my numbers before and after) and how we enjoy the food. I think the thing I'd like to veganize most is refrigerator oatmeal. It's made with greek yogurt and I have yet to find an acceptable vegan substitute. Any ideas?

For now I keep it simple :) baked potato, onion, baked pumpkin, tofu, and my own baked bread and all sorts of salads :)

I've been vegan for only 6 months. I've read everything the library had on the subject of vegan cooking, and was so sad to have to return The Kind Diet after renewing it twice. So far, I've lost 25 pounds and finally healed the intestinal damage from radiation treatments I received almost 5 years ago. I am amazed at the way my body has responded to the Kind lifestyle. This will be my first vegan summer. I've been able to re-create most of my favorite summer foods in a kind way, but the one thing that speaks of summer to me, that I will never have again, is whole steamed lobster in drawn butter. It would be interesting to try to duplicate that taste and texture in a kind way. And it would be wonderful to have a signed copy of your book. Thanks for changing, and healing, my life.

I'd love a sumptous vegan version of a big clambake - a gorgeous steaming hot spread of corn, potatoes, chowder, clam cakes, and tons of other goodies. It looks, smells & tastes fantastic on a warm summer evening with friends & family!

Vegan BBQ's a better then meat BBQ's anyday! I don't miss much from this summer activity except maybe a vegan version of my Mother's potatoe salad.

A recipe I would love to Veganize would be a really good Alfredo Sauce. Yes, this has been veganized a hundred different ways, but every one I've tried never tastes all that great, and it never satisfies me the way the good hearty, cheesy, creamy Alfredo used to! I MISS IT! Maybe one day as our Non-Dairy cheeses get better this will be attainable! Hurrah for Daiya ;)

I just made a pretty awesome vegan chili. I put it on top of a baked potato, complete with chives and chopped onions. So delicious! :)

I would love to make a whole spread: Vegan burgers (maybe bean patties), Vegan potato Salad, and Tofu 'egg' Salad.

I love new vegan burger recipes, made out of more than just faux beef or something. The best one I've had, and I don't know if I'll ever be able to recreate the recipe exactly since it sort of happened on accident, was made of chickpeas and black beans with some breadcrumbs and Cajun seasonings. It was delish and when my meat loving boyfriend grilled them, even he agreed they were amazing! I don't much care for meat substitutes that are trying to taste like meat. I much prefer delicious vegan food with amazing flavors that stand on their own, not imitations!

my mom had some great recipes when we were growing up for lemon freeze orange juius . I t would probably be pretty easy to veganize those recipes and make even better

I've been a vegan for a little over a year now and I'm still working on converting old recipes and finding great new recipes. One thing I'd love to make a vegan version of is my sisters Crescent Veggie Pizza or her taco dip. She always made them for any summer get together and I'd love to make a vegan version. Stephanie Wampler I actually found a great substitute for Deviled eggs here http://www.vegweb.com/recipes/my-husbands-deviled-egg-solution-potato-angels. I actually add a little sweet pickle relish to mine but you could basically use your favorite deviled egg recipe and just use these potatoes instead. They are so... good.
