"The thing that surprised me the most is that it is waaaaay easier than you think it is going to be! Giving up meat is mentally easy b/c it's a dead animal..as in their muscle and fat, gag. But you think life without cheese or ice cream will be awful and that it's just impossible. BUT, there are so many amazing non-dairy ice creams available everywhere now that taste just as good, if not better, than the cow milk kind.....and cheese? I give you my word that if you go 30 days without cheese and then you bite into a piece of cheese pizza - which could have been my boyfriend at one time - it will really taste like complete blech! It smells like dirty socks, kid you not, and it will make your stomach feel queasy and just yuck. No joke. Dairy is an acquired taste, and when you have been away from it a while, your taste buds and nose will remind you right quick!"
And Jorgen's response was:
"The most surprising discovery that emerged as a result of going vegan is how much ones diet can transform their overall point of view. Ones diet isn't just about the food one eats, it reflects what that person thinks about themselves and the world in which they live. Putting some thought into every meal you prepare and eat eventually emanates from you in other ways: in how you relate to yourself, to other people, other beings, and to the world as a whole."

I actually just read The Kind Diet in June and I'm just begining the change over to vegan, but I know next Memorial Day, by the way my neice and boyfriend both have birthdays May 28th and May 30th that take turns falling on Memorail Day so I will be Preparing a vegan birthday menu for my boyfriend and I and a much healthier birthday menu for my neice who's name is Alicia and all her little friends,since I am the party planner in the family -
Your last statement is exactly how I've been feeling. As a new vegan, will be a month this Friday. I find myself wanting to live a more "kind" life in every aspect of my life.

I was actually traveling to Vegas during Memorial Day, but if I were at home I would have made a roasted chickpea and roasted veggie sandwich with a vegan cole slaw. Super yummy!!

I've recently became unemployed & have had struggled with keeping up my kind deit. I was raised in the south so eating meat & everything fried was just a daily habit. Luckily my mother, stepfather, and I moved up to Seattle and all those bad habits eventually faded away. Since then I became a vegetarian, discoverd I was lactose intolerant and slowly but surely am becoming more of a vegan! With your help of course :) I'm 21 and unemployed like I said before trying to go to school so it's been a struggle getting fresh veggies and healthy alternatives to meat and dairy! But I've been making ends meet! This past weekend I grilled portebello mushrooms and had cucumbers with vinegar and sliced tomatoes! Delicious =)

I made a delicious couscous salad! It was cooked in organic vegetable broth and orange juice and I added a ton of veggies. Sooo yummy!!!

Well, I live in Canada where we don't have Memorial Day...but the week prior we do have a long weekend for Victoria Day.
This year on Victoria Day weekend I cooked a huge Vegan Indian FEAST with Chana Masala, a curried spinach dish and quinoa on the side. We also had some fresh made naan from a local Indian grocery and my absolute FAVOURITE condiment ever - mango pickles.
I would love love love to win a copy of your book. I've been vegetarian since I was about 11 or 12 years old and only in the past 2 years or so (now 27) I've gone vegan. I still have slip ups from time to time, so I wouldn't say I'm 100% vegan, but I'm working on it and I think your book would help from what I've heard about it.
Thanks for being an advocate for animal rights and a vocal vegan - there really aren't enough of either out there!

For memorial day my non-veg friends and I made a huge meal for our group of friends. We are all college students so we pitched in a few dollars each and were able to feed 6 people on less than $25 total, talk about a steal!
For an appetizer we started with baked sweet potato fries with curry hummus, then after we opened a bottle of our favorite local wine, enjoyed a fresh mixed green salad. For the main course, we devoured vegan black bean burgers fresh off the grill - with sides of roasted veggies and quinoa. We topped off the meal with home made vegan chocolate cup cakes. Such a great meal to celebrate the weekend with friends!

This year I was with a group of non-vegan friends. But in order to keep with the fun, I opted for some Veggie baked beans, a edamame and Soba noodle salad, fruit salad, veggie dogs and burgers (both Vegan!) and a homemade avocado corn and bean salsa! And of course, can't forget some Vegan chocolate to nibble on while everyone else indulged in s'mores! Yum :) This gal did NOT go hungry!

I'm happy to announce this is my first full week of being a vegetarian and I couldn't feel better about this decision. My Mom and I both started last Tuesday on the 15th. After I shared some of the amazing stories from your blog she decided to join me on this amazing adventure. I have been sharing treats such as your peanut butter cups and the Crispy Peanut Butter Treats With Chocolate Chips with my sister and brother in law who are currently meat eaters and they love them! My boyfriend is a bit skeptical but maybe he'll warm up to it sooner or later. As far as Memorial Day weekend goes I'd love to make a homemade veggie pizza! I currently don't have a grill so that's not an option for me. I'd also like to try a new vegan dessert. My Mom found a delicious chocolate cake that's been calling my name since she made it. She currently lives in VA so our correspondence is through email pep talks. She's suffered from many stomach issues over the years, something I may end up facing in the future. However, now I'm hoping to prevent with my new "kind" diet:) Thanks for inspiring us!

I really want to try to start grilling more veggie kabobs. I'll be out of town for Memorial Day but that's what I'd be grilling if I weren't! I also love a good marinated and grilled portobello.

Oh goodness I LOVE reading everyones ideas!!! I am a very new baby vegan. The change for my life was really simple actually. We are expecting! So I made my appointment for the dr and a week later was horrified to see that my iron was low and my weight was up 7lbs! I came home with a strong determination . . . to relearn what being healthy means. As I started becoming educated more and more items were evicted from our cupboards and fridge. The last thing I ever expected was to become a vegan. I was the first one to smother something in cheese or make it bacon. And with all the crazy food aversions from being pregnant I never thought I could do it! But shockingly enough I can do it!! The benefits went waaay past health. I have not gained a single pound (Im only 13 weeks no additional weight gain is great right now) and my iron is perfect. What I did not expect was the changes in my homelife. My husband, daughter, and I have so much more energy to take walks together. My daughter and I prepare meals together rather than just throwing something together. Cooking food that is nourishing my family is such a wonderful feeling. It has been really fun bringing our fresh healthy dishes to our holiday family functions. Easter (the celebration of eggs lol) was a challenge but we won the crowd over with our tofu fritatta. So for Memorial Day we are having friends and family over for a BBQ. Instead of hotdogs and burgers we will be setting up a yummy veggie shish kabob bar. We are going to have a mass variety of skewer friendly veggies so people can Build their own kabobs. I havent got all the side dishes figured out yet but reading these comments I am getting some awesome ideas!

This is a tough one. My fiance and I have discovered so many wonderful foods, and variations of favorites since we went vegan that I'm truly not sure at this point. We do love marinated portabellas grilled, and grilled zuchinni, and corn. Oh, and a delicious potato salad I perfected with Veganaise. And I want to try a couple of desserts on this site, including Alicia's peanut butter cup treats. There are so many options! I know holidays are supposed to be about the people and what the holiday stands for...and not about the food. But the food is sooooo good!!!!

I'm planning on making Chef Chloe's mac n cheese, my little niece loves it more than the dairy versions...
A cousin gave me a vegan junkfood cookbook for my birthday, so I want to attempt the vegan corndog recipe in it.
I also want to make some black bean burgers from scratch :)
I'm also planning on blending up some watermelon and ice to make watermelon slushies.

I can't wait to grill up a storm!! Likely we will put some kebobs on the grill with tofu and veggies, and place corn on the cob straight onto the grill as well. It's quite possible that we may have some vegan hotdogs or sausages next to those, with toasted buns! Can't wait to celebrate!

I'm trying to eat more whole foods, so I'll probably skip the boca burgers and opt for some portabella burgers. Seems easier than making a burger out of beans and whatnot.

For memorial day I will be visiting my little sis at my family house! It is both her and my borthdays that week. We will likely enjoy some homemade artchoke raviolli with cashew creme and a nice big salad with cake for dessert!

I've been on my RAW journey for a few months now (feeling better than ever). I recently found a recipe for Veggie Nut Burgers. I like all the ingredients so I'm looking forward to giving them a try.
The recipe is super easy...you simply mix the following in your food processor: 2 stalks chopped celery, 1/4 C chopped onion, 1 Tbsp sea salt, 1/2 chopped red bell pepper, 2 Tbsp oregano, 1 C ground sunflower seeds (soaked and dehydrated), 1 C ground flax seeds, 1/2 C water. Blend in the food processor until mixed together. Form the dough into 4 patties and dehydrate at 105 degrees for 3 hours.

I definitely want to try carrot dogs this year, maybe also bbq tempeh burgers and raw zucchini & cherry tomato salad with pesto. then probably strawberry- and blueberry-almond milk ice cream with home made magic shell topping (just melted coconut oil + chocolate). Hadn't really thought about it yet, but yum, now I can't wait for Memorial Day! I'm so glad you asked this question!

My Memorial Day menu is all about the salads. Potato salad with lots of carrot, celery, onion and vegenaise..mango-arugula salad(my fave combination).. veggie pasta salad..roasted corn and black bean salad..and guacamole is a must! Throw in some bean burgers and finish it off with sweet potato brownies and I'm in heaven!

This year for Memorial Day, my husband and I are going to a Cubs game at Wrigley Field (to celebrate his birthday). Therefore, instead of cooking a vegan meal, I will be indulging on their sloppy jane vegan sandwich. It is a vegan sloppy joes!

I will be making "Cheeseburgers" and "hot dogs," along with "mac & cheese," potato salad, and of course a big salad. I live in a house full of meat and dairy eaters, so I have found that I can substitute these items without any grumbling. No one even knows the hot dogs, mac & cheese, and potato salad are meat and dairy free...they think I am feeding them the real stuff!
