Kind Lifer Christi recently asked me to recommend great vegan alternatives for cheese, chicken, and mud pies, so here goes!
Cheese
- Daiya - the most popular on the veggie streets!
- Galaxy - I've never tried this brand, but if you do, let me know how you like it!
- Follow Your Heart

Chicken
- Gardein - the scallopini is great!
- Any plant-based "chicken" nuggets in the frozen section are good!
Mud Pie
I've never had mud pie, but I found an insane recipe for vegan mud pie (pictured above) from Chef Chloe. Uh, hello! I'd take one of those - a few big bites! Yum!
There's also a vegan bakery in Kansas City, MO called Mud Pie Bakery and Coffee House - I don't know if they actually serve mud pie, but if you leave near Kansas City, check it out and let me know! And try Rice Dream's Chocolate Pie. My fave is the mint flavor!
These foods are great for flirts and vegans. For all you superheroes, these are not foods to eat everyday, but if you want that naughty fix, you can't go wrong here!

Personally I must say that what "Amy's" are making seem to be very good, I don't know what kind of vegan cheese they use but their pizza are excellent, and I have a burrito in the freezer that I'm going to cook today... There are many things I wanted to try like the rice ice cream, the brand available where I go have a lot of calories, so the only advantage is that it's vegan... The most popular brand of "vegan" meat here is "St Yves", they make very good sausage and decent "meat" slices to make sandwich...

Some people eat non-vegan "veggie" cheese because it has no cholesterol. I had a former co-worker who could have no cholesterol, so he was nearly vegan, but he'd eat some of these pre-fabbed foods with partial milk ingredients, and he had an egg white sandwich every day.
But I agree, it makes me angry that companies hide the milk ingredients and call it "trivial" and they ain't all that good to begin with.

I made Chef Chloe's Mud Pie for my mom and my sister on Thanksgiving last year. My sister and my mom (non-vegans) loved it. My sister wouldn't even let me take the rest back home - she wanted to keep it all to herself. I have to admit, I was super proud that my non-vegan sister thought something vegan was absolutely-can't get enough delicious! :)

I tried that galaxy rice vegan cheddar slices...and they are awful. They have basically no flavor, taste like chalky thick paper. And I agree a lot of their foods are not truly vegan, but the ones that are clearly say "vegan". I think in general it's rather silly to make non-dairy cheese tha isn't vegan...I find it hard to blieve there's a lot of people who aren't vegan that still choose to eat fake cheese...

DON"T BE FOOLED BY GALAXY!
A lot of the Galaxy cheeses contain casein, which they expertly hide on the label. The packaging will say: "Lactose Free*" or "Dairy Free*" however, you have to pay attention to the little * on the label. On the back of the package it will say *Adds a trivial amount of lactose. To true vegans, I doubt this amount is trivial.

Cannot agree more about Mudpies, KC response! Wholesome, creative, tasteful vegan desserts, hemp and cashew milk steamers and lattes, very friendly staff and a great "low key' atmosphere. I was recently recommended this place and now it's my favorite spot to tutor my husband through nursing school.

I have used the Galaxy shredded cheddar in the recipe from your book for the vegan burritos, which are my favourite. Then I tried the Galaxy shredded mozzarella in a vegan lasagna with spinach & mushrooms and also enjoyed that very much. So I would recommend the Galaxy brand for use in recipes.

I just tried Wayfare Hickory Cheddar. Wow!! It's so yummy. If you haven't tried it, I highly recommend it.

if you're in baltimore, you have to try emily's desserts' cinnamon buns. the best thing ever!!!! if your in new york the raw vegan cheese cakes @ life thyme. so good!!!! i'm from MD, but live in NY now. Luna & Larry has amazing coconut ice cream called coconut bliss. they have a new flavor called ginger cookie caramal! it's outta this world!!! i love it!!!
for fake meat, i love the beefless tips from gardein, i think they r the best. & the seitan meatballs from nate's. i put a little flax oil or sometimes tomato sauce on them. i also love the macro vegetarian & karen & sisters products. i always get the veggie turkey or the chicken lo mein. de-lish!

I eat at Mud Pie Vegan bakery in KC all the time! I have never seen actual mud pie dessert available but they have a lotof vegan cookies and cupcakes. Everything there is wonderful! A must try!

I'm leaning more towards superhero these days but I have (out of curiousity) started trying a few of the vegan cheese options here & there. I have tried the Galaxy "cheese" and the soy-based cheeses are really good but the rice ones are kind of weird and don't really taste like cheese. That's just my opinion. The smoked provolone veggie slices are really good, though, and the cheddar ones are decent.

I love follow your heart cheese, even more than daiya,although daiya is more convenient, being that it is pre-shredded...although I do enjoy daiya as well.

Thank you for the heads up on the Mud Pie Vegan Bakery and Coffeeshop in Kansas City!!! Really hard to find vegan places in the midwest sometimes. I have found 3 in KC alone now!!! It is just a 25 min drive away woohoo!!! Daiya is the bomb!!!

mmmmm Daiya is by far my favorite cheese ever. I have issues making grilled cheese with Follow Your Heart and the Daiya though for some reason and that is my toddler's favorite thing. So any suggestions on that would be great! :) Also Chef Chloe is awesome!!! I was so glad I found her site because she makes some amazing things that my husband even enjoys and he's a hard one to crack because he still likes meat. lol.

Funny that you mention it. I just caved in and bought some Purely Decadent coconut milk cherry amaretto ice cream. It was so worth it! Less than 150 calories for a good sized serving (about 1/2 cup).

I love Gardein! I don't often try to replace meat but for the kids it's a great way to work them over to vegan living. It's fabulous grilled with some veggies.

I love Galaxy slices for a nice grilled cheese, but you have to check carefully - not everything is vegan!

I love Galaxy cheese and use it all the time. It does not melt well at all, but it tastes great. I did not realize that some of it has casein in it. I thought I read all the labels completely. Now I'll have to go back and check my information.

Galaxy tastes very processed to me. Not a fan at all. Vegan mudpie sounds yummy though. Perhaps we will give it a whirl this weekend.

We use galaxy cheese - the kids really like it, but it doesn't melt that well. And be cafefull because the Galaxy cheese that does melt has casein. I had been using it for a while before I figured that out.

I really like daiya cheese. I've had great success on pizzas, eggplant parmesan, sandwiches and so much more. I'm excited about the new pepperjack. If its as good as the mozzarella and cheddar style than it will be fun to experiment with to make vegan versions of classic recipes!

AC DF have you checked out the Uncheese Cookbook? You could probably make your own organic cheese substitutes.
