Every Sunday, my husband and I go to the farmers market. And then we come home and cook! Here are a few pictures of recent meals we made from our farmers market goodies.

oh my goodness
I live right near the market!
I had this great dish at a local place and got things to recreate
heavy nighshades, but all have good nutrientst too
bake layers of eggplant (which brings forth subconscious thoughts)
with tomatoes (lycopene!)
spinach (iron! greens)
and garlic (immunity)
and often add oils after cooking, like olive here
as Brigitte Mars says in her raw food link on you tube
Free Radicals are not the people you knew in college!!! lol
also great, pineapple guacamole with jicima "fries"
these dishes above look so great!
I still love the kale chips sent out about this summer
serious staple
will get my dehydrator going soon and send something in!

I have been buying local vegetables and without packaging ever since reading in your book about how it is far more environmental-friendly. So thank you for this, and all the other inspiration you provide.
Food looks great. My mum has often got a box of organic veg delivered from a local farmer.

The last few weeks there have been an abundace of peppers at the markets around here. We stick to the organic vendors since those are among the most heavily sprayed conventional vegetables. We've been cooking them into black beans & pinto beans and making burriotos! They are also quite good raw or in a stir fry.

I visited a local organic farm the other day and got a ton of yummy vegetables.... I made a tasty dish of roasted kale & cherry tomatoes, steamed broccoli & carrots, sauteed zucchini & radish, avocado & red onion, dandelion greens sauteed with garlic. It was really delicious!

Living in Florida in the fall is brilliant, we have an organic farmer's market so everything is local and seasonal, so much abundant deliciousness to choose from. This week I made a smokey lentil, kabocha squash and millet stew, kinda bar-b-que-y, and sweet and a vegan mac n' cheese with rice pasta(www.crazysexylife.com). I really get into soups this time of year...today its bok choy and shitake and mashed & baked cauliflower.....bon appetite:)

I love farmers markets, but always seem to be too busy to make it to them. So I signed up for a Community Supported Agriculture box instead. A CSA box is a weekly box of produce from a local farm. I use Full Circle which operate in Boise, Seattle, Spokane and Anchorage.
I see CSA as a win win. I get a box of fresh local farmers market quality produce delivered to my door once a week and local farm gets a reliable revenue stream. I am also encouraged to try new types of veggies.
This week I made a black bean and summer squash quesadillas.

The last outdoor farmer's market of the year in my town was yesterday! Coincidently, the roasted eggplant with cornbread stuffing recipe I just posted included stuff I got from the market. From the farmer's market sometimes my family just eat sliced heirloom tomatoes with olive oil on top... they are just delicious!

We live in a city that has a beautiful farmer's markets. Although we grow a lot of our own vegetables in our backyard garden, we love to visit the local FM for the "togetherness and fun" it has to offer. Thanks everyone for your wonderful recipe ideas. Kim, we still have tons of arugula in our garden--I can't wait to try your dish. This is my first comment in your web. I'm from Argentina and in I live in Buenos Aires City. Down town of course, we don't have a farmers markets and I can't go to the country side because I don't own a car. So I kind of see what would I do if I live where you do trough your website.

I went to your site Elenore and it's simply amazing! Great photos, great dishes...so refreshing! I love raw food, but it's very hard to do - at least for me. One day I may be able to go raw. It takes alot of time, that's for sure, but the rewards are truly unbelievable. My husband and I made a raw lasagna, and it was to die for! It took us 3 hours in the kitchen! lol! Wow..and just think, there was no cooking involved! ha! For now we are gluten free, meat free, dairy and egg free! Living The ME-gan Lifestyle and loving it! Thanks for sharing your site with us!

My girlfriends and I recently hosted a Harvest Dinner using in-season veggies from our local farmers market. I made a carrot puree, root vegetable soup with truffle oil, roasted butternut squash and an arugula and grilled fig salad.
