Living in Texas, with Texas palates, we love this book and have been using it for almost three years now (which is how long I've been vegan). A lot of simple recipes and quick fix meal ideas make it great, but more intensive ones like the veggie enchilada casserole are our favorites.”

“This is a great book. He's so right on, on many issues too. I have tried and enjoyed many of his recipes. Loved his ultimate bowl of cereal. His SNACK is a manly meal (for a lady), but I did the mix in a small bowl size and it is really sustaining and quite tasty. I had to try it cause it was so different than my regular bowl of two or three mix-ins. I truly recommend this book!”

I was lucky enough to have been at the premiere showing of the movie "Forks Over Knives" in NYC a while back. Rip was on the panel which had a question & answer session after the movie. Someone in the audience challenged Rip re: the costs of a vegan diet. Rip quickly dismissed her saying "how much do rice & beans cost; next question?" I loved it and never forgot it. As far as the book, I think it's important to note that Rip feels strongly about limiting your oil intake (even healthy oils). -
This book looks awesome. Not going to lie, a compassionate and healthy man is a sexy man. :) -
Vegetarian for ten years, I also became vegan for spiritual reasons in 1996. Personally, I have long suspected that spiritual behavior or higher states of being (or aspirations to higher states of being) are supported to an extent by Mother Nature or that there should be evidence of a correspondence between current human physiology and our earliest spiritual and physical natures on Earth. Guess what? It turns out there is, from a nutritional perspective. For those who may be interested in seeing the health benefits of their spiritual outlook, or as I, a healthier way to eat vegan, here's the book, which is solely concerned with nutrition: "The China Study" by T. Collin Campbell. It is easily found on amazon.com, and you can also read an excellent wikipedia article on the book. -

Have you done "Eating Animals" by Jonathan Safran Foer? My daughter gave it to me and I am about to start it. -
I'm not sure if this one has been assigned yet, but what about Why We Love Dogs, Eat Pigs, and Wear Cows: An Introduction To Carnism by Melanie Joy. I just started reading it and it is pretty fascinating and makes me delve deeper into veganism. -
What should we read next? How about The Lucky Ones: My Passionate Fight for Farm Animals by Jenny Brown? It sounds like a wonderful, moving book. -
I'm a fan of Rip's after seeing him in the documentary too! I'm raising three vegan boys who are athletes and I constantly here from non-veg's that they're not getting enough protein, calcium, calories...etc. I'll be recommending this book from now on! Love it!!

I just received a book as gift from a friend called "Veganomicon" The Ultimate Vegan Cookbook by Isa Chandra Moskowitz and Terry Hope Romero. So far I like it. It is very educational, talking about stocking the pantry, kitchen equipment, and how to cook a vegetable, grain, and bean. It does, however, use sugar in receipes and the occasional oil. So you can substitute as needed. But overall very healthy and appears to even have some superhero recipes also. It has little tips for each recipes. Not a lot of pictures. -

LOVED him (RIP) in the DVD "Forks Over Knives" (2011) with his father, Caldwell Esselstyn, Jr. My absolute favorite "food" Documentary! If you haven't seen it, you've missed a GEM!! I prefer NOT to read books--I'm lazy, OK. ;-)
