We went to a friend's party, my first 4th of July as a vegan. They made pulled pork. I made red and white quinoa tabbouleh, vegan cornbread, vegan cole slaw and haricort vert salad with beets and red onion. Everyone enjoyed my vegan contributions to the meal. It was a great day with friends and family. I may not be a superhero yet, but when I see others enjoying my vegan recipes, I sure feel like one :-)

It's my cat Gavin's 13th Birthday and we are celebrating! Gavy was a stray and my Mom rescued him from the woods near a McDonalds in 2001. He's so happy, he knows it's his birthday and head "bumped" me when I sang to him. For dinner, I made vegan Mexican rice with fresh hot salsa, brown rice and fresh avocado. It's a great day!

@nicole that's wonderful! Proud of you! :) I'm in anorexia treatment phase still, not sure if I've entered the recovery stage just yet.
Fourth of July I spend with my doggy, Kahuna! He has anxiety issues, and the fireworks always terrify him. Since I loooove him :D I stay to take care of him through the noise, and watch the fireworks on the National Mall on TV. Since I went to school in DC (now back in California), it's fun to watch! I miss that city.

We're going to a barbeque at my aunt's house and then it's off the fireworks. We are celebrating it like we do every other holiday--an excuse to cook up a vegan feast! Field Roast hot dogs, Tofurky beer brats, Veggie burgers, sweet potato fries, our homemade picked zucchini, macaroni salad, corn on the cob, grilled veggies, peach cobbler and homemade watermelon ice pops! But sadly no fireworks for us this year in Colorado Springs :(
Hard to believe how many animals will be grilled today when there are so many nicer and healthier options available... Wish we could expand our celebration of freedom for them as well.

Just hanging with the family, going to be making veggie dogs, zuccini spaghetti with tons of raw veggies, mana bowls, and of course some kind of dessert (probably banana bites).

We are starting the day receiving blessings from a Tibetan Buddhist monk. Then we are going out for breakfast. Then we are celebrating the rest of the day by honoring freedom...in this case, freedom from schedules and commitments. :)

Today is actually my 10th wedding anniversary. We are celebrating with a hike and then breakfast for dinner....tofu scramble and pancakes!

This gorgeous Independence Day is my second anniversary of living without Bulimia Nervosa, after 11 tumultuous years of suffering. My dog, your book, and Atlas Shrugged have been the reasons for my gorgeous state of health. I wrote about it, just this morning, at my article entitled, 'Eating Disorder Management #4, Post Bulimic Diet Evolution'.
