I hope you have a happy Mardi Gras! Its name "Fat Tuesday" refers to the feasting that would take place on the Tuesday before Ash Wednesdsay, when fasting for Lent would traditionally start. Whether you're Catholic or not, it's always fun to celebrate with yummy food. Here's the recipe I posted recently for Vegan Jambalaya so you can get in the spirit bon appetit!
How are you celebrating Mardi Gras?

I made the Vegan Jambalaya last night for dinner. It was super yummy. I used vegan sausage in stead of bacon and chicken in mine. We alway celibrate at work. Our boss passes out leftover beads for everyone to wear for the day.
