One of my favorite success stories is from our community member, Tevia. She was also featured in my book. Tevia is an amazing superhero and was able to cure her MS symptoms through diet! She is a hardcore athlete and a super sweet soul. I love her!

Tevia's plunge into the superhero lifestyle wasn't always easy for her either because of a persistent sweet tooth. I think a lot of you can probably relate to that too. But she took her newfound knowledge of cooking and eating kinder and began a vegan baking business called The Lil' Vegan Baker That Could. Her Peanut Butter Truffles and Peppermint Cookies (I didn't even think I liked Peppermint before trying these) are so freakin' good! It's insane how tasty they are! So if you live in LA, you must try her treats. And if you aren't in LA, you are in luck! Tevia was sweet enough to give me the recipe for her amazing Chocolate Peppermint Glazed Cookies. Enjoy!

Cookies:
INGREDIENTS
2 1/2 cups of unbleached flour
1/3 cup of unsweetened vegan cocoa
1 tsp baking soda
1/2 tsp salt
1 cup of vegan margarine
1 1/2 cups of coconut palm sugar
1/3 cup unsweetened plain soy milk
1 tsp pure vanilla extract
2 tsps pure peppermint extract
Glaze:
INGREDIENTS
1/2 cup maple syrup
1/2 cup cocoa
1/4 cup water
1/4 tsp apple cider vinegar
1/8 tsp salt
2 tsp of vanilla
1 tsp peppermint
STEPS
Preheat the oven to 350.
Whisk the dry ingredients together in a small mixing bowl.
Blend the wet ingredients together in a large mixing bowl.
Add the dry mixture to the wet mixture to form the cookie dough.
Make 2 inch balls and bake them on an ungreased cookie sheet for 7-9 minutes.
Let them cool on a wire rack, while you prepare the glaze.
To make the glaze, combine the maple syrup, apple cider vinegar, salt, cocoa and water in a small saucepan.
Bring it to a bubble over medium heat.
Remove from the heat and stir in the vanilla and peppermint extract.
Drizzle over the cooled cookies while it's still warm.
Quickly sprinkle them with vegan crushed peppermints.
Allow the cookies to sit for 5 - 10 minutes until the frosting solidifies.

I baked the chocolate peppermint cookies last night and brought them into work today. They were a hit! I actually tossed in regular vegan sugar instead of coconut palm sugar. The batter was very dry but the cookies themselves are very soft and tasty. Deanna, thanks for the tip to use agave nectar. Thanks Tevia and Alicia for posting the recipe! -
I tried this recipe out last night and it was amazing!!! I couldn't find coconut palm sugar anywhere so substituted with agave nectar... Going to make a big batch tonight to bring to friends and family :) -
Just wanted to say after 20 inches of snow fell today I decided to make the kombocha and blk. soybean stew, only I used adzuki beans instead. It is truly amazing just as you said in the book, it is the most delicious dish and am inviting a flirter over tomm. to try and i know she will love it too. Thanks

Tevia, you are such an inspiration! I wish more people would wake up and realize that their diet could be making their lives more difficult. I found out a few months ago that my aunt has MS, but she is being secretive about and I'm not supposed to know. Hopefully she will eventually be open about whats happening and then I can suggest she connect with this community and speak with you Tevia and learn how you successfullly beat your MS! -
i love how much sweet alternatives there are that are vegan, as i have a hopeless sweet tooth and need dessert daily! -

Hi Alicia, I read your book - and I love it! I've been vegetarian for the last 2 years, and now after reading your book Im going to try being a superhero :) Anyway, I know a lot of people have a sweet tooth and need something sweet in their diets, but I am more of a "savoury tooth", and I love things like potato crisps! Do you have any recipes that are vegan and somewhat healthy to satisfy my "savoury tooth"? Thank you :) -

Patty,I agree although this website is a magazine of sorts that seems to be eco-friendly with respect to saving paper, recycling, etc. and if you want information from other people that are also professionals on the subject, they are very accessible here.
