
Apples are in season, and as we get into cooler weather, what's nicer than a mug of hot apple cider? Here's how I made it for Thanksgiving last year:
Ingredients
- 6 cups organic apple juice
- 1/4 cup real maple syrup (you can use way less - let's face it, apple juice is sweet on its own)
- 2 cinnamon sticks
- 6 whole cloves
- 6 whole allspice berries (I never really use these, but if you have them laying around, go for it)
- 1 orange peel, cut into strips (optional)
- 1 lemon peel, cut into strips (optional)
Instructions
- Pour the apple juice and maple syrup into a large stainless steel saucepan.
- Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string. Drop the spice bundle into the cider mixture. I'm not that concerned if it all sits in the broth loose - just be careful not to pour it into your mugs when you serve it.
- Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling. You can leave it on the lowest simmer during a party.
- Remove the cider from the heat. Discard the spice bundle. Ladle the cider into big cups or mugs, adding a fresh cinnamon stick to each serving if desired (I never do that part - it looks fancy and nice, but feels like a bit of a waste of a cinnamon stick - so it's optional).

Yummmm. Just enjoyed a glass of warm apple cider with cinnamon sprinkled on top. While I hate that the weather's getting cooler, there are definitely some things that I love about fall! <3

I just made a simliar recipe in the crockpot for a recent mom's night in, and it stayed warm all night and was accesible for guests using a ladel. I also used coffee filters instead of cheesecloth and tied up the ends with string.

I made this really recently!!! It was awesome but we had way to much soo I saved the rest in a jar in the fridge and used it in pumpkin loaf instead of water - it was yummy.

If you're lazy (like me) Trader Joes has several ciders (apple cider, apple pear cider and cranberry cider) in the juice section that you simply have to heat up. They apple pear cider is pretty good. Unfortunately, I don't think any of them are organic though :(

i grew up in a home with an apple tree, so we made tons of homemade apple cider, juice, pies, sauce, etc. one thing i used to love besides traditional cider was to heat up a cup of cider/tea in a pot and add a bag of a good spiced herbal or mixed tea .. such as mandarin orange spice or constant comment and let that steep in the hot juice as i would tea. i usually add a little sweetener but not much as, like you said, apple juice is very sweet on it's own.

Here in Mexico we do something called Ponche that is a beverage made out of all the seasonal fruits like guava, sugar cane, apple (since we're a tropical country apples are seasonal here in fall), a fruit called tejocote, prunes, raisins, and everything with a hibiscus and tamarind base. Basically you put everything in a big pot with water an some maple syrup (traditionally sugar) and cinnamon and let it boil until every fruit has let the flavor out. It's great!
