
Kind-Lifer Katie converted one of her favorite chicken salads into a kind salad recipe. Sounds yum!
Prep time: 10 minutes, Total time: 10 minutes, Servings: 1
Ingredients
- 4 cup(s) of greens
- 1 avocado
- 1/2 apple
- 1 tbsp. of chopped pecans
- 1/2 cup(s) of beans
- 1/4 cup(s) of chopped celery
Instructions
- Rinse greens, avocado, apple, and celery.
- Chop avocado and apple. Throw in a big bowl with greens.
- Peel and chop celery and toss into bowl.
- Toss in beans and pecans.
- Drizzle with favorite dressing or vinaigrette if desired.

Hey. This recipe sounds very tasty and easy. But what is meant with "greens"? Just salad? And which beans are you supposed to use? White, red kidney beans or something else? Do you boil them beforehand? Thanks for your help. Annelies

I have come up with a wonderful vegan potato salad made with a base of extra virgin organic olive oil that's cold pressed, organic garlic, and some organic broccoli...and with some organic lemon juice added...I make sure that the organic russet potatoes are fresh, and they are sort of pan fried after being boiled...there are so many ways to prepare food in a vegan, kind way...you just need to experiment and be creative...
