
Ok these cookie dough truffles by Chef Chloe look pretty insane. I haven't made these yet, but I hope to in the near future. I want one right now! Super naughty flirty treat. If you make them, let me know how it goes.

Cookie Dough Truffles
Ingredients
1/2 cup vegan margarine
3/4 cup packed light brown sugar
1/4 teaspoon salt
1 tabelspoon pure vanilla extract
2 tablespoons water
1 3/4 cup all-purpose flour
12 oz semisweet chocolate (dairy free)

I've made them and they are amazing! My only suggestion is to use an alcohol free vanilla extract. Someone that I served it to said that they could taste a little alcohol. DELICOUS!!!! -

I made these for a Super Bowl party this year! Best recipe ever! There weren't any left for me to take home...I guess that's a good thing! Everyone LOVED these! Make them, you won't be disappointed, I promise. -
I just made these and they are AWESOME. I used a little less flour and substituted the rest of the flour with some ground flaxseed. Also, as far as Alicia promoting "unhealthy", I think it was pretty clear that this is a naughty flirt recipe. And don't we all need a naughty flirt day here and there? :)

I couldn't wait to make this recipe today....I call it "Monday-make something New day" all this summer.
So here are the replies from my home....first with a sample of the batter..."YUM!" Then my son asked for more... we just HAD to sample a little more after it sat in the fridge..YUMMY...:) Then I finished the balls and dipped and both sons enjoyed one after dinner for their treat. (We do a scale of 1 to 10 with ten being the best or a KEEPER...I asked him what he thought and he said, BETTER THAN A 10, can I have another one later?
My other son said THIS IS REALLY GOOD MOM......and later my husband tried one and after his first bite said WHAT'S in here? And after I read the ingredients saying the site said if we like cookie dough we'll like it, he said this does taste like that.....it's good! I said "and EASY too." He said WE like Easy.
So there you have it. it is a MAJOR hit over here. and I plan to make this again for OTHERS to enjoy too.

Why are we glorify seductively addictive fats, sugars, and oils/fats. Don't we get enough of that on PBS cooking shows?
I love the efforts of Alicia to help us live healthy lives. I adore Alicia for her courage in promoting healthy plant based foods. That's why these unhealthy food posts seem at odds with other posts and they are simply counter productive. Eating vegan is not enough. We need to consider health consequences.
I do support the rights of people to kill themselves slowly, but that should be a fully informed decision.

If you're concerned with the raw flour, try almond flour instead. It is surprisingly versatile.

Maura, here is the full recipe from Chloe's site (you add an extra 1/3 cup chocolate chips):

Oh, yes. I've made these and can assure you that they are de-lish. They get a phenomenal response too. I brought them to Easter this year and they were almost instantly devoured by the entire (non-vegan) crew!

One can make these a heck of a lot healthier without the margarine/oil or wheat flour.
Both not good in combo with sugar.

I've used a very similar recipe on bakerella.com and that recipe says to use 1/2 cup mini chips in the dough. Although this amount allows for a nice even amount of chips in each truffle, I added maybe a tbsp more only because I love chocolate. ;) Hope that helps.

I hate to bash the above recipe but... as a former pastry cook (with a formal culinary education) I cannot EAT RAW FLOUR! GROSS!!! I hate to be a pastry snob but eating raw flour makes my skin crawl.
I must admit, I haven't quite wrapped my brain around vegan baking. I love being a vegan; however, converting my professional baking recipes into vegan recipes has been challenging to say the least. To that end, there has to be a better way to bind the dough in the above recipe without the use of flour... wish I could offer a suggestion, but as previously mentioned, I have yet to wrap my brain or chemisty around vegan baking. After all, anyone who has worked in the field knows pastry recipes are referred to as formulas.
Just my humble two cents.

The recipe sounds yummy and looks divine. Recipe states 12 oz. of mini chips and says melt 12 oz. so how many mini chips are needed additionally in the rolled dough? THANKS, MC
