Lea's 'Guilty Pleasure' Meal

This is my guilty pleasure right now...it's cheap and easy to make!
- 2 slices of Ezekiel bread
- 1 avocado (1 half mashed on bread, other half on a dish with a little salt on top)
- 1 Amy's Vegan veggie burger
- 2 slices pepperjack rice cheese
- A few tomato slices
*For extra flavor, add hot sauce or salsa!
Also, my favorite organic wine is called Our Daily Red (available at Whole Foods) soooo good!

My guilty pleasure is Boca Chik'n Patties. As a kid, my favorite school lunch was the chicken fillet sandwiches. Boca's version tastes just like the comfort food of my childhood with half the fat, half the calories and 100% less dead animal! :)

I've got a thing for vegan nachos:
Tortilla chips obviously.
i chop up onion and grate carrots.
tons of red pepper flakes and veggie cheese, whatever vegan cheese
and dip in barbecue sauce...

Anyone with the book. I've returned my copy to the library again and need help remembering how to make the breakfast cookies recipe. It's on page 164 or 184 I think, it's call breakfast oatmeal cookies recipe or something. Could someone post that recipe for me. Thanks ALL!!

My guilty pleasure is a smores oatmeal...quick cooking oats, cocoa powder, sugar, vanilla extract, vegan marshmallows, carob chips and graham crackers. Cook the oats in almond milk, cocoa powder, sugar and vanilla. Stir in carob chips at end and top w/ marshmallows and graham crackers. Alternative is to also mix in some peanut butter! YUM!

This looks so good. am not sure that i can find rice cheese in London. I also don't eat soya, so is difficult. maybe have to go without the cheese part.

This makes me miss CA where you can buy wine at a grocery store. They don't do that in NJ. I'm not sure where I could find Our Daily Red or other good organics wines around here. And I love wine. How sad :(

I like making my own veggie patties.
2 shredded carrots, 2 shredded zucchini, 1 shredded sweet potato, 1 shredded potato, 1/4 cup shopped broccoli.
mix all items together in a bowl, grab a handful at a time and drain the liquid, then form into a pattie and set aside. (repeat until mixture is gone). Heat a small amount of olive oil in a skillet and cook the pattie about 3 mins each side, unless you want it a little crispy.
I enjoy eating this when i feel like eating something bad but still good for me, add a vegan slice of cheddar cheese and melt it on top then place a bun on top.

Seitan picatta! Love the lemon and caper combination on just about anything (kale or other greens with a little umeboshi plum paste mixed in is heaven)!

1. I REALLY love baking 1-2 sweet potatoes for 1 hour at 400 F. Then peeling + mashing them with some some unsweetened plain soy milk + earth balance butter + sea salt + pepper. Mix it all together like mashed potatoes. It is DELICIOUS!
2. Also similar to Lea's favorite- I like a whole grain or onion bagel, with some mashed avocado (sprinkled with sea salt and pepper), amy's non dairy classic veggie burger, slice of onion, and follow your heart monterey jack "cheese." Toasted in the oven until the burger is cooked through. It's great!

try it with my avocado receipe. mash 2 avocados, add 125 grams cherry tomatoes, and mix well. then add my dressing to the mix, fresshly squeeze half a lemon, and add a teaspoon of crushed garlic, less if u prefer, but at least 1/2 teaspoon of garlic, add this to the mix & season with maddox salt, about 1 teaspoon, more or less, if u prefer. then give it all a very good mix & you've got the most yummiest avocado/cherry tomato paste, that u can add to any sandwich or burger :)
taste will vary depending on the variety of avocado, cherry tomato, lemon & salt. but near enough is good enough :)
for a nice salad dressing, just juice one lemon, add good olive oil, so that u have 60% lemon juice, 40% oil, then add one teaspoon of crushed garlic & drizzle of a salad sandwich or add straight in to the salad bowl & mix, season with salt to desired taste.
again taste will vary according to lemon & oil being used, so play around with different oils, for something different, after all we all have different taste buds :)

Current obsession: homemade oatmeal! I've just discovered it and I can't get enough of it! I use oatmilk and old fashioned oats, a sprinkle of cinnamon, sometimes some brown sugar, and any fruit I have around the house - banana is rocking my world! I top it off with organic, local honey and it's the best way to start my day!
