
I was on a kick and had the mochi waffle from my book (p. 286) for breakfast a lot. It takes just ten minutes; yum!!! If you haven't had this, you really must! It's superhero, and it's delicious and quick.
Mochi Waffles Drizzled with Lemon-Walnut-Rice Syrup
Ingredients:

1 cup walnuts

1-1 ½ packages plain mochi (Grainaissance brand is good)

½ cup brown rice syrup
-
Juice of ½ lemon
Instructions:

Toast the walnuts in a dry skillet over medium heat until just starting to turn golden and fragrant, about 5 minutes, stirring often

Transfer to a bowl to cool, and chop coarsely

Set aside

Preheat a waffle iron

Cut a package of mochi into 3 large pieces, widthwise

Slice each piece into long fingerlike pieces, about 3/4" wide

Using 6 to 8 strips for each waffle, place the mochi strips on the hot, ungreased waffle iron and close the top

Cook until puffed and slightly crispy but not too hard and dry, about 3 minutes, or until your waffle iron signals that it's done

Remove the waffle and place on a plate (do not stack the waffles because they will stick together)

While the waffle cooks, combine the rice syrup with 3 T water, lemon juice, and toasted walnuts in a saucepan

Stir together over medium heat just until warmed

Pour over the waffles

Serve and eat waffles as soon as possible - they are best hot and crispy!

sorry to comment off-topic but I'm not sure where else to comment about Juice products--Alicia, is there a brighter shade of pink lipstick? Does Juice have a sparkly goldish eyeshadow and non-liquid charcoal grey eyeliner? If not, could these become part of JuiceBeauty line? Red lipstick would be nice, too. Thank you. -

Oh, that's what they look like :) I saw the recipe in The Kind Diet but was afraid to try it. I do see mochi at Whole Foods... anyone have a particular brand they like?

THANK YOU, Alicia, for this recipe! I used Grainaissance and it was delicious :-) I've had mochi before but only as ice cream. This is the first time I've encountered mochi in its partially raw form. It's now a daily snack for me. Once or twice a day I throw a few strips on my waffle iron, cook for 3 minutes, add a dash of maple syrup, and i've got a delicious vegan snack! -
You can order it online, if I'm not mistaken. I've seen it on Amazon, but check some sites like vegan essentials.
I had this for breakfast this morning, and sat out on my porch to eat it! I finally broke down and got a waffle maker, and have made the mochi waffles and the rice waffles (also great!). I've found that the mochi waffle meal only takes about ten minutes to prepare (once you've made it a couple times) and makes a great weekday breakfast too.

I'm having trouble finding mochi. We don't have Whole Foods here. I went to an Asian market and asked for it and they took me to some packaged cookies. Then I said no, it's a baking product, they took me to Mochiko Sweet Rice Flour. Can I get Mochi from Mochiko?

you can find packaged Mochi at Whole Foods in the cold section:) I prefer the plain, cos u can make it however you like:). Alternatively, you can make it yourself, it's an arduous task though. Boil 2 cups sweet brown rice(4c water) , put in a bowl and pound the you know what out of it for like an hour, spread it on a baking sheet(floured or greased) let it set up in fridge. Cut unto pieces wrap and freeze til you need it. I have used a food processor and it works pretty good.

Thanks @Kala Clark for the pan version suggestion--this looks great! My favorite breakfast is a quick curried tofu scramble with soy sauce and coconut milk along with multigrain toast or corn/rice cakes. yum! yum! I'll have to check out the version @Amber Gligor referred to in the Kind Diet book!!!

I just made a pan version of this since I don't have a waffle iron...put a little earth balance in the pan...seared on both sides then put a lid on it adding a little water to steam! I also used the cinnamon raisin mochi and made a maple syrup/pan toasted almonds/ lemon juice syrup. yummy!!!

This looks delicious. If I ever get a waffle iron (can't now due to budget) I will definitely try it! The breakfast dish I've been really into lately is a tofu scramble. There's a variation of it in the book The Kind Diet, although I was making it even before I read it so I do my own take on the recipe. Anyhow, I think everyone should check out the Scrambled Tofu recipe (under superhero recipes, breakfast). It's super easy to make and delicious as well.

i have to say i really like making a miso soup and bringing it in the car with me in a big tall cup while i bring my son to school . it is really yummy to sip on and cleans the blood while en route. :)

I live in a small town, where can I find Mochi. I looked at the asian store in a much larger town but couldn't find it. Where do I look?

Mochi is one of greatest things your book introduced me too. That and Daikon. I love both of them!

These waffles look so good! I need to get a waffle iron. I like baking or pan frying mochi and topping it with cinnamon and maple syrup. I also love the pancakes from the Skinny Bitch Ultimate Cookbook. My kids are 4 & 2 1/2 and they can finish off a whole batch between the two of them!

Oh my goodness... these look amazing! I've never tried mochi... but I'm adding it to my grocery list! Lately for breakfast on the weekends, I've been chowing down on this Tofu Scrambler with "Chorizo" and Pan Fried Potatoes with Green Chilies . So good!

I have had these several times after reading your book. So easy to make and delicious! My husband and I made them for my mother-n-law and she loved them too. :) Now I want them this weekend. :)
