
I love this simple, slightly sweet carrot salad! Here's how to make it:
Grate three or four carrots and mix with a handful of raisins. For the sauce, whisk together vegenaise, ume vinegar, lemon juice, and a little grated ginger if you like. You can swap the ume vinegar for white balsamic, but I think ume is delicious.
Pour the sauce over the carrot and raisin mixture, just enough to coat, then mix it all up and dig in!

Tofu Watercress Salad! mix the dressing--tamari, sesame oil, sesame seeds--pour it over sliced red onion, watercress, and cubed tofu :)

I am new to this too, and I've tried kale a few ways. My favorite was I steamed it briefly and then put the leftovers in the fridge. The next day I ate them cold with a bit of balsamic vinagrette I had in the fridge. I would eat that every day. Yum!
Also, I just made a batch of a broccoli salad, inspired by my favorite BBQ place when I lived in Kansas and before I was eating vegan.
Simple: Chop a couple crowns of broccoli. I stuck mine in boiling water for one minute and then in a bowl of ice water to stop the cooking. That way they are a beautiful bright green color that I find pleasing when mixed with the other ingredients, but just doing it raw tastes great too. Then add about a half a red onion diced. Then about a quarter cup each of sunflower seeds and golden raisins. I made a dressing of apple cider vinegar, olive oil, a splash of lemon juice and a little sugar (don't have a better sweetener in the house right now, but I think I'll try it with agave nectar or brown rice syrup when I can find some near me.), plua fresh ground pepper and salt to taste. Mix all that up and let sit for a while. The flavors just go so well together and the raisins give it some sweetness. I'd like to try with dried cranberries one day too, but I wanted the raisins to make it as similar as I remembered.

Yumm I haven't had a sweet carrot raisin salad in a while! This sounds delicious. I bet some added toasted almonds, pecans or maybe even sunflower seeds would a yummy, crunchy addition!
I agree with all suggestions for Kale...its a great addition in smoothies; if you're going to eat it raw, massage away and season well; but I love it cooked! I love to cook it finely shredded with onions and garlic and some cumin, chili and coriander and add some corn and diced zucchini and use it as a taco or quesadilla stuffing!

Kale chips are good too. REmove the stems, coat with olive oil and then bake in the over until they're crunchy--10 to 15 mins (350 or so).

I second Sabrina's idea: Give that kale a workout! Massage for 10 minutes with any oil and it's divine!!

The trick to getting raw kale taste good is to massage it. Yup, it's true! When you massage it with a little oil of your choice (I like macadamia nut oil), plus a little ume vinegar, it becomes darker green and almost "cooked" looking. Add some tomato, avocado, dulse, pumpkinseeds...it's yummy!

You can blend raw kale into fruit smoothies (he bitterness goes a little incognito when mixed with fruit). I also put a few raw kale leaves into peanut butter sandwiches.
When you cook kale it's not as bitter - it almost starts to taste like a milder leafy green like spinach or something. I sautee garlic and kale together in olive oil, add salt to taste at the end, and toss it with cooked pasta. Really yummy, quick and easy. I have also added pistachio nuts to it and it was even better.

You can use kale as a substitute for spinach in just about any recipe. More calcium for you!! Also great in green smoothies. You'll see, it really grows on you. It's my favorite dark leafy green, hands down. I like it best steamed w/ a drizzle of olive oil and balsamic vinegar. Or with a touch of sesame oil and sprinkled with gomasio. Yum!!

I am wondering about kale too, I made the ume dressing for it in Alicia's book and that made it pretty good. How else can you serve it? I was thinking olive oil and kosher salt, but I need help with ideas for kale!

Reminds me of a favorite salad of mine! Grated carrots and beets, add a handful of sunflowers seeds (sesame seeds are great too!) and a mixture of rasberry vinegar and 1/4 teaspoon of olive oil.

Dinorah-- I like Bragg's because I know I'm getting a ton of healthy amino acids. It tastes to me a lot like soy sauce-- it too is derived from soy, but doesn't have any of the usual alcohol or high sodium content of most soy sauces. Here's a list of all the awesome amino acids Bragg's contains:

FRENCH MAMMA>> I don't know where you are but I'm in Southern Cal and I go to Fresh and Easy for most of my groceries - they have THE BEST thing in the world - BROCCOLI SLAW. It's shredded broccoli with some red cabbage and carrots. That's it! no dressing or sugar, you do with it as you will. I use it as a topping for everything, like most people use cheese. It's the only way to get my fiance and mother to eat broccoli. Other stores have a broccoli slaw, but its not as good as F&E. Try it in your next salad, its so much easier to use than making your own - and the prices there are really good. And most of their stuff is local.

Can someone share why use Braggs Amino? I bought it but it tastes fishy? If It's really good element to add to foods, I can get used to it.
