
If you haven't made my Quick Date-Apple-Cinnamon Oatmeal (pg. 196 of The Kind Diet), you really ought to. I kinda forgot about this recipe for a long time, but recently rediscovered it during my pregnancy, and it's freaking delicious! Honestly, it's maybe the best oatmeal in the entire world... I'm gonna go ahead and say it's hands down the best oatmeal I've ever had - it's just perfect (for me, anyway)!
While I wouldn't really call this a superhero breakfast, it is fast, tastes delicious, and is way healther than most easy breakfast foods! If you want to make it more of a superhero dish, you can use less maple syrup than the recipe calls for. And if you want to go even more superhero, substitute brown rice syrup for the maple syrup.

Quick Date-Apple-Cinnamon Oatmeal
Makes 1 serving
Ingredients
- 1 cup organic rolled oats
- 2 tablespoons maple syrup (you can use less, or you can use brown rice syrup to make it more superhero!)
- 2 tablespoons chopped walnuts
- 1/3 crisp apple, cut in cubes
- About 5 dates, pitted and chopped
- Fine sea salt to taste
- 3 shakes of ground cinnamon
- Scant 1 teaspoon flaxseed oil
Steps
- Bring a kettle of water to boil
- Combine the oats, syrup, nuts, apple, and dates in a bowl
- Add a pinch or two of salt, then pour enough hot water to just cover the oats (don't add too much, or it will be too watery)
- Cover the bowl with a plate or pot lid, and let the oatmeal stand until the oats have absorbed the water
- Stir, and add a little more water if the oats look too dry
- Let the oatmeal cool a little, and then drizzle with the flaxseed oil

This is by far the recipe that I have used the most from the Kind Diet. I eat it every morning during the fall and winter months. I do not add the maple syrup. I find the dates to be sweet enough. I do add a generous tablespoon of almond butter and some Chia seeds-yum. This oatmeal is comforting and filling during the drizzly fall/winter here in the North West.

Alicia, this recipe is AMAZING! Until I made it this morning, I'd never made oatmeal by simply pouring the hot water over the oats and letting them steam before, it's so much easier than the stovetop method! AND I made it for my omnivore boyfriend and his gluten-free friend [I used Trader Joe's gf oats] and they both loved it as well. I can see why you find it so addicting.

The organic peaches are so delicious this year, I add a a whole peach to my oatmeal every morning. I've also just discovered a great summer time breakfast pudding: avocado, banana, apple juice, mango or pineapple and maybe some homemade soy yogurt.

I have been eating this for almost 2 years now. It is one of my regular go-to's. I love it so much I have given the recipe and all the ingredients wrapped up as a gift twice. Both loved it!!

Nothing beats adding a twist to your usual oatmeal in the morning. What I do is add some strawberries and nuts, like macadamia or even walnuts to add taste and texture to it. Though just plain oatmeal is enough to get you through the meal, it will bore someone who want variety.
Though for me, I even have oatmeal bars or oatmeal cookies for snacks, and I do get that snack daily. So to each his own, still. -

Horizon's 1% actually - the only 1% I can drink - great taste - wish I could stop drinking milk but I love cereal and it just doesn't work for me with soy or almond milk, etc etc.

I actually love RAW oatmeal with delicious Horizon's Organic 2% milk, a lil honey and blueberries!! Love it, love it!!

this looks so beautiful. I do find breakast to be the most challenging sometimes because of time, etc. I make your polenta a lot but I'm still hungry after a short time. I'm noticing now that you recommend veggies with your grain meals in the morning so that might be what is missing! I use this site constantly. I also add some homemade granola to my steel cut oatmeal. I love the crunch and I do not need any sweetner. I also add flax seeds. I am not loving regular rolled oats after eating the steel cut ones for a while ...they are too mushy! Steel cut have a little more fiber and a great texture.

This posting has made me think about oatmeal all day! I just soaked some rolled oats and added molasses, agave nectar, touch of olive oil, and some cinnamon. Tastes like a cinnamon roll! Mmmm...

We love steal cut oatmeal in the morning, I soak in in a pot on the stove overnight so I only have to warm it up rather than waiting for it to cook. I will add this recipe to the steal cut -sounds great!

I like to use coconut oil and coconut sugar in my oatmeal. I have no idea how healthy it is, but it sure is good. But I was surprised recently to learn that contrary to what I had thought, brown rice syrup is not all that healthy.
According to Dr. Michael Greiger, who makes it a point to scour the most up-to-date medical journals for the latest in nutritional facts, brown rice syrup is actually the least healthy of all the sugars. The only sugars with any nutritional benefit at all is molasses and date sugar, date sugar being the best. So I suppose a true super hero would sweeten with date sugar. Or maybe a true super hero's oatmeal would be sprouted and eaten with kale.
