
A little while back, I asked you to share your favorite kind snacks for a chance to win a signed copy of The Kind Diet. Our winner, kind lifer Kyra submitted this snacky recipe:

My favorite go to snack is baked lotus chips with rosemary! Beyond delicious and easy to make and store.
Ingredients:
1-ounce bag of pre-cut lotus root
1 Tbsp. lemon juice
1 Tbsp. olive oil
1 tsp. rosemary
Instructions:
Preheat the oven to 450F. Soak the lotus root for 10 minutes in water with the lemon juice. Drain and pat dry with a towel. Lay the lotus root on a baking sheet. Brush on both sides with olive oil and rosemary mixture. Bake until a golden color (15-25 min).
These keep for 3-4 days - if you’re lucky; I eat them all way before that. If you do not like rosemary there are so many flavors that can pair well with these. You can also cook taro root the exact same way!

Sounds yummy! If you make this, I encourage you to try cutting the whole root yourself as this is the most healing. Sometimes the precut kind has been bleached, and it’s unclear what’s been done to it. But for fun and convenience, pre-cut is great.

I am an Animal advocate.I'm trying to do all I can to make a difference.
We are more and more fighting for Animal Rights and on my opinion it should be everyone's duty to try to protect everyone who is vulnerable.Two videos have completely changed my life: one about a little fox killed in the most horrible way I even didn't know existed and : From farm to fridge.All my life has changed completely.I'm fighting for all the animals trying not to leave anyone behind especially our wolves who have such an unfair and untrue reputation and who are destroyed in the most horrible ways.I'm crying a lot all the time but that doesn't make any difference so I put my anger and sadness into action and I will never stop fighting for our animals.Nothing special, but if everyone was doing it , our world would be a better world:) -
In just letting my husband know how much an eye into the animal industry has affected me, we have many vegetarian and vegan meals now. I can't believe how supportive he's been. Even though he does not want to be vegan, or vegetarian, he still goes meals without meat, and often other products. It's great to have support, hopefully it will affect his health and change his mind! :) -
It hasn't been very long since I made the switch (and I'm still not 100%, though I'll be there soon), but I've already convinced three people to make the step towards their own healthier, kinder diet.
What did I say to convince them? I didn't say anything, actually. I showed them. I let this new lifestyle breathe through me, all naturally. As I began to get healthier, I became happier, more energetic, kinder, more relaxed, and have started to gain a nice glow. They see what I am becoming, and they want to head that way, too.
That's the thing about living kind- it spreads. Kindness is one of those things that multiples the more it's used and spread, not depletes. Kindness is one resource that is truly renewable, because it grows every time we make use of it. Showing the health benefits, both physical and psychological, of the kind diet is unavoidable, because the world thrives on love, and vegan living is the most loving way a person can live. The kind diet is love for the family, love for the earth, love for the animals, and love for the self. -

Have FAR less meat meals than she used to! I have been vegetarian for 15 years before going vegan and have been so for about 5 years. After seeing me continue to stay healthy, even through my pregnancy, she was convinced! Our whole family is vegan (me, hubs and our 17 month old). She started seeing what I was eating and was intrigued. I made enough tasty meals for her to want to make some on her own. Now she has take raw classes and eats meat about 2 times a week instead of every meal! Every little bit helps! -
At the beginning of this year, I started something called The Daniel Fast. Basically its vegan diet with more restrrictions: no caffine, no sweetners, no processed foods, no flour and nothing to drink except water. I did this for three weeks. My first meal after the fast tasted horrible. I had borrowed The Kind Diet book from local library and started making more recipes from it. I started to feel better. I was sleeping better too. My exhusband noticed the positive changes in me. He was a guinea pig when it came to new foods too. He has been interested in making beter food hoices for our children. He LOVED the crispy peanut butter treats! I believe he will work more with me to make positive changes for our kids. -

This morning I asked my daughter if she'd ever eaten a chicken that she's known. I told her a story about a turkey who woke me up one morning in Mexico and ended up on my plate that night. Later, I asked her if I should wear the sheepskin coat I got 20+ years ago. She said I shouldn't b/c the sheep died so I could have the coat. We talked about what would make sense to do with the coat now, and decided that throwing it away was not a good idea; maybe it could still keep someone warm who really needs a coat and can't afford one. -
When I met my husband, he was a heavy meat-eater (4-6 times a week consuming flesh - which he thought was necessity to build muscle). I have continually shared articles, videos, information about my lifestyle all which he believed but felt he could never do. I persisted! 2 years ago, when I became pregnant with our son I told him my plan to raise him vegan and that my hope was for him to consider it as well. He has been vegan for one year! I am thrilled to know he did this for his health and our family! -
My husband has adopted a much kinder diet now after I went vegan. First he thought I was going through a phase, but after explaining to him how passionate I was about animals and how can we be animal lovers if we eat animals? And he eventually cut out all meat except fish, then he dropped the fish, and now he's cut down almost completely on dairy and eggs! Makes me so so happy! :D -
I'm a newbie to the kind life. My initial curiosity came about because of my skin being easily prone to acne. I never realized that the diet I grew up with was the product of government influences on Native American people. Commodity foods for instance were one of the detrimental changes to a true traditional diet the Navajo people lived by. Initially, Navajo people lived off of a plant-based diet because our ancestors ate that which came from the earth. Nowadays many people are unaware of how Native American people are at a high, if not the highest, risks for health issues in nearly every category. As a family oriented person, which happens to be a common trait shared amongst Natives, I want my family to live wholly. I look forward to continuing my newfound journey. Flirting with vegan has done great things thus far for my health, both internally and also on an external level. I have shared my insights and experiences about the kind life with my own family. Recognizing that its foundation has ties with our traditional foods has allowed my family to lend me their trusty taste buds! It would be so amazing to learn more about using the kitchen as a medicine cabinet. -
When I first became vegan like 5 years ago , I showed my 2 daughters "Meet your Meat" videos and they have been vegetarian ever since...I am always bringing treats when i go to a friends or bringing sweets to work which My friends love -
I've been a vegan for 2 1/2 years because of The Kind Diet. My sister recently had a baby and ever since has been very interested in health for both herself and her son. When I went to visit her shortly after he was born, she asked me what I was doing to be so vibrantly healthy. So of course, I recommended that she read The Kind Diet, since that's what converted me. She read it, and immediately informed me that she's flirting! She also told our mother to read it as well, so we're both attempting to get our mother on board as well! -
I have been vegan for a year now, and my biggest fear when starting was that I would have to constantly justify myself when people learned about my choice to not consume any animal products. I have been so lucky to find that my friends and family have not only been understanding of my decision, but they have all made an incredible effort to embrace my new lifestyle. Some of my mom's new favorite recipes are now vegan, and my boyfriend (who is Italian) has loved the challenge of making amazing food that I can enjoy with him.
I also am strongly involved in CrossFit, which is generally strongly tied to the Paleo Diet. While I certainly have not converted any of my team mates to a vegan diet, I have proved to them that you do not need to consume animal protein to be healthy and strong. -
I don't have a deep story such as others here had a tremendous impact in their lives and with their loved ones. I have been experimenting with vegan foods as I'm already vegetarian since birth and started to try new things such as quinoa, chia seeds, coconut, vegan cheese, etc. My friends/coworkers have heard and/or tasted some of my dishes which had influenced them to broaden up their food choices (few strong meat lovers now opened up to eating healthier and veg food options as I encourage them to taste as they were hesitant or giving suggestions of healthier recipes for diabetic coworker). Also, my closest friend is an inspiration and fitness buddy while one of us try to make new dishes for the other person weekly. She had pushed unintentionally and unconsciously to try other kind foods and organic than my usual vegetarian dishes.
Hence, I believe that people inspires others especially after they enjoyed the delicious yummy foods (or see amazing food porn photography). :) And, thus as part of this year resolution, my bestie and I have decided to do a blog on food, fitness, and more which hopefully will inspire others! :) -
I have made the choice to go kind last year after being hospitalized at the age of 23 for pneumonia. It was the scariest moment in my life that lasted four days, not only was I deathly ill but I was also across the country as a nanny and very alone. After I regained my health (thank you all the research on being a vegan) and moved back home I spent time showing my animal loving and voice in our town for the homeless pets mom what being a vegan really meant. She not inly understood but also felt the need to become a vegan. I enjoy sharing in my local Wyoming town how being a vegan is just as Western as being a non-vegan and now my friends are asking questions and even watching videos on being vegan. I love that my gentle showing of the wonders of being vegan has brought my mom and me closer, improved my life and brought a chance to showpeople how to be kind! -
After watching Forks Over Knives, I told my boyfriend, mom and brother about the cruelty behind animal products we consume on a daily basis. My brother gave me a vegan cookbook for Christmas and as a family we have been switching out meat for tofu and lentils in many of our favorite dishes (tofu enchiladas!). My boyfriend and I have been eating at Que Se Raw Se Raw (a vegan restraunt here in Burlingame) and he has even come to enjoy the cashew kale pasta I make for him! I would love a copy of your book to learn more and encourage more people to go vegan! -
whenever I menu plan and grocery shop, my boyfriend sees the large effort I put forth to ensure that we are eating as kindly as possible. At first he was nervous that my going vegetarian and then vegan would be difficult and may make meal times hard, but after a full year of vegetarianism and mostly veganism, he is noticing it isn't "all that bad". He has become more open to trying new meals, even when he has never heard of some of the ingredients. He will watch documentaries with me and engage in discussion regarding factory farming and animal rights and fair treatment. It's going to be a long process, but I am working on him (and my mother who lives two hours away) all the time. I always try to make their favorite meals kind - vegan alfredo sauce, vegan mac and cheese, vegan chorizo and tofu.. so far I have received positive responses and make it my goal to create their favorite foods in an animal friendly and healthy way! I also share posts that I find interesting with them via email and engage in discussion once I know they have read it. -
I actually took my room-mate to an Earth Day festival and while there they had a booth set up by PETA. We went in and talked with the folks there about treatment of animals, more specifically farm animals, and we read literature about it. Shortly thereafter, I did research on the testing of animals for multiple products out there and shared it with my friends and family on facebook. I feel if I gently nudge people with the truth, they too will become kind humans. -
I have been vegetarian my entire life, and growing up I used to have lots of yoghurts and drink lots of milk, and as my Mum was the one doing the shopping and cooking, I felt a real lack of control over what I ate.
The change came for me when I moved out and went to university, because I finally had some autonomy over my meals. In high school I remember a girl I knew had Greek family and felt that because their diet revolved so much around meat, she couldn't make the transition to vegetarian, let alone vegan, despite a strong love of animals. So I think this along with my own experience has shown me that autonomy over what you eat (i.e shopping and cooking for yourself) plays a major factor.
At first I didn't really know what I was doing, I was living off toast, noodles and pasta mainly. Milk suddenly became barely in my diet, because it went off so quickly, and I just couldn't use enough by myself.
I met my boyfriend, and together, we have been gradually refining our diet, to be kinder, healthier, and more natural. He was a meat eater, but as we were eating meals together, I convinced him to try some vegetarian meals, so that we could cook and eat together more easily. I was lucky in the sense that he quickly realised he didn't miss the meat, and was happy to do this. However he still ate meat at restaurants or when we ordered takeaways. Eventually after I explained to him my ethical reasons for being vegetarian, and showed him various ethically compelling articles about how animals are treated, particularly in the factory farming conditions, he stopped eating meat at all, and began strictly following a vegetarian diet.
Fast forward a year, and we have recently begun making our own vegetable stock cubes, make virtually everything from scratch where possible, and having emptied the fridge before the winter holiday break, we used that clean slate as a chance to finally take the plunge and go vegan. My boyfriend was hesitant at first, but I had health motivations as well as ethical ones (everything I had seen on The Kind Life website and also an article I saw on the ISFoundation's website about milk and the way that the cows are treated, including taking away their children almost immediately after birth so that the males go for meat and the females are prepared to become milk cows) and I convinced him, though he was skeptical, to try it. It has only been a few weeks, but I already feel so much healthier, clearer, generally more amazing, and I asked him and he agrees.
We're now committing to it long-term, and have been writing down some recipes as we have created them. One of my favourite new discoveries has to be Quinoa, we both loved it. Now we are starting to really settle I would love - when I get some extra time free from university work - to post some of our recipes on The Kind Life and share it with everyone here. I recently read your post about vegan shoes, and it has inspired me to look around for some vegan, eco-friendly clothing brands in the UK, as although I never buy leather, I want to take the vegan lifestyle a step further in all areas of my life, and it has been wonderful sharing all this with my boyfriend. When I have children (though probably not for a while) I know that The Kind Life will be my first stop for Kind Mama advice, and I am just so grateful for the changes that The Kind Life has helped me make. -
About a year ago, I was spending a few months with family in Florida (a long way from my home in Michigan!) when I met the love of my life. After only dating for a couple of months, it was time for me to leave, and we took a huge risk and decided to live together in Michigan. I had already been vegetarian for almost two years, but hadn't yet made the vegan leap, and then I read The Kind Diet. We decided together that this was something we felt strongly about and really wanted to do, so we did it, and we've been happily and successfully vegan for about eight months! Things have worked out amazingly well, and I've never been so happy in my life. Being able to make this change in my life with someone I want to build my future with is so important to me. We love sharing our story with our friends and family, and little by little, many of them have made changes in their lifestyles too! -
I have been a strict vegetarian for many, many years and several months back after exposing the cruelties of meat, chicken etc to my mother she has become a vegetarian and has created so many recipes and is so passionate now about cruelty free cooking. Its lovely as she has come up with all sorts of filling soups etc that taste beautiful and she is loving being a veggie and feels so much better too. I hope we win the competition as I would like us to learn how to cook some vegan meals as I for one want to switch to full-time veganism - I've already ditched dairy. it took time but they saw I was healthier, lost weight and had more energy- the one thing everyone thinks is but is not- its more expensive to eat kind...not true- its cheaper and you also save money on mendial bills and more. Do not force but lead and show.show how tasty things are..and encourage bc you love them -
I helped my husband make a change by simply making changes myself. I got your book from the library, talked about what I was learning, talked about what I learned from reading The China Study, bought some yummy and awesome condiments mentioned in The Kind Diet, and I just cooked different foods than I had the day before. I think the best way to nudge someone (who already respects your opinion) is to introduce something new like this in a non-threatening, non-judgmental, and non-controlling way. Some people make changes because people they respect make the changes, some people make changes because they read objective research, others need an excited, charismatic person to lead the way. I just knew that my husband doesn't want to be forced to so something, wants to know some facts but not nearly as much as I do, and he wants to test things out without being worried about failing. So, I set it up like that. A few days of healthier eating proved that this lifestyle change is the healthiest. The 'diet' speaks for itself now. -
College is not an easy place to follow a "Kind Diet." Needless to say, everyone looks at me like I'm crazy when I say I'm vegan! I try to explain how awesome it feels (physically and mentally!) without being preachy, but I just couldn't help trying to influence my roommate a little bit! She's one of my best friends and is always there for me, so I wanted to help her live healthier, and longer, too. I started off trying to wean her off her Diet Coke addiction- it was perfectly normal for her to go through 5 cans a day, complaining of a headache when she didn't drink it- and (very) slowly, but surely, she began making changes. It's been a few months and I am so proud to say her diet is completely animal (and soda) free! Her headaches are gone and we are about to leave for spin class in a few minutes! Now, if I can just convince my 300 other sorority sisters...
