vegan herb cracker recipe!

My friend Mimi sent me this recipe for these crackers from Elana's Pantry - they are vegan and gluten free, and they look good! Check it out:

Vegan Herb Crackers

Ingredients
2 cups blanched almond flour
¾ teaspoon celtic sea salt
2 tablespoons Herbes de Provence
1 tablespoon olive oil
2 tablespoons water

Steps

1. In a large bowl, combine almond flour, salt and and Herbes de Provence
2. In a medium bowl, whisk together olive oil and water
3. Stir wet ingredients into almond flour mixture until thoroughly combined
4. Roll the dough into a ball
5. Press between 2 sheets of parchment paper to â...› inch thickness
6. Remove top piece of parchment paper
7. Transfer the bottom piece with rolled out dough onto baking sheet
8. Cut dough into 2-inch squares with a knife or pizza cutter
9. Bake at 350° for 9-11 minutes, until lightly golden
10. Let crackers cool on baking sheet for 20 minutes, then serve

    Made these tonight and they were delicious. They have a slightly crumbly texture, but not bothersome at all.

    IN the oven as we speak. I added a pinch more oil so not so crumbly. I did a veggie spice.

    Yes! You can grind your own almond meal out of raw almonds. Be careful not to let it go too long, though or it will start to clump together. <3

    I was wondering if you can make your own Almond flour? I have one of those Blendtec blender that does everything but the kitchen sink. We make our own rice flour. Is Almond flour just crushed up almonds, or is there something else to it?

    This may be a dumb question but can you easily substitute a different flour and what kind? I'm allergic to Almonds (and Pecans and Walnuts).

    What a simple and versatile recipe! And I think you could easily substitute other herbs. Take your pick! I just ordered a 5 lb bag of almond flour from Honeyville. They make great almond flour. Can't wait to try these crackers!

    WOW!! I was just eating some pita chips and hummus and I was thinking....hmmmm......the only way this would be better is if I could make my own pita chips or crackers! Thanks!! I'm going to make it this weekend!!
