Sweet Potato-Lentil Stew

I made this stew sunday night...was so easy, ingredients were inexpensive and I had it over brown rice...really comforting and yummy, with a nice smooth taste.

i thought about giving it a couple whirls with an immersion blender too. i love this recipe.
