It sounds so simple it's silly. I just bake a potato in the oven for about an hour on 350 degrees. ( I prefer to poke it with a fork and wrap it in foil for moisture)
I use my wooden spoon and spray olive oil to toss some "Gimme Lean" sausage crumbles to remove the pasty consistancy. I toss some fresh sliced mushrooms in toward the end to get a light saute. Vegan mozerella cheese can be placed in the open hot potato, then add the sausage and mushrooms, top with more vegan mozerella. Voila!
It is a really nice lunch for me.
