I found this on recipezaar and I love it! You can make this with any grain, really. It's so colorful! I sub the ckn. broth for veggie, of course. And I like to let it sit for a few hours so the flavors can meld. And it's great leftover.
I made this last night and we ate it during the football game. My husband (who's not exactly on board with changing to a vegan lifestyle) loved it! It was also very filling with the beans. Unfortunately, the rice milk didn't go over as well ;-) Thanks for the recipe. I'll be sure to keep this one in the rotation!
