So, I'm going thru the recipes and was wondering if anyone has any suggestions on which ones I should start with. I would love any input.

Maybe try a soup, the Lentil Stew and Hearty Pinto Bean Stew look good! (pg 170) It is that time of year too- I will probably start with a soup too, easy to make, lasts awhile (depending on how many you are feeding) and difficut to mess up :)

do you eat a lot of greens? if not start with bok choy.
do you eat a lot of beans? if not start with any of the stews...all the suggestions are great! lentil sweet potato stew is sooo good with the bok choy and with the cous cous...but thats a lot of food to make for one little person...so maybe have a friend over and make it a fun few hours...and have choc penut butter cups after???

You should totally try Kabocha squash! Alicia has a recipe with black soybeans that I haven't done yet. Tonight was the first night I tried that kind of squash, so I wanted to taste it completely plain. All I did was steam it and it was oh so good and oh so filling! Mmmm!

Loved the peanut butter cups. Not really a meal but it was an ice breaker for those that came over for my first attempt at a recipe in the book. People were actually looking forward to the dinner that was coming later on(the lentil sweet potato stew) and they loved it!!!! I had to show them first that giving up meat doesn't mean you are missing anything
