I just made the sweet potato and lentil stew last night and it was perfect after such a cold and rainy day! And I agree with Alicia, the Bok Choy is freakishly good.
I also suggest the pumpkin bread and the rice crispy treats.
Is this your first vegan cookbook, Kelly? If so, make sure you pick up Veganomicon (chickpea cutlets with mustard sauce) and Vegan cupcakes take over the world (butter cream frosting) once you get more comfortable cooking this way. The same authors also came out with a vegan brunch book recently (which shows you how to make tempeh bacon!).
Let us know what you cook and what you think of it. :D
Try the rustic pasta, that is so good and has a familiar feel to it for those who Re new to this and want familiar meal.
I agree with Robyn those cookbooks rock!!! I only have Vegan with a Vengeance, of Isa's will be purchasing the rest soon, and the recipes are wonderful. Good Luck!!
I would take stock in your kitchen and make something you have most of the ingredients for.
The first recipe I tried was the Eggplant Chana Masala. Quick, easy and yummy.
For a really good recipe try: Rustic Pasta, ceasar salad, Seitan piccata (for a big rich meal but my all time favorite ever), moroccan couscous, Peanut butter cups! Also any quinoa dish or bok choy with ume vinegar drizzle. Also the carrots, oinions ans arame is one of my favorites really good intro to sea veggies and superheroness.
Also just try making brown rice or and a bean or lentil recipe. The best thing to learn as a flirt is that you can make amazing food but that there is still really simple good food you can make everyday.
