Very Tricky Situation, can you help??

I am looking for suggestions and ideas.
My husband is in the military. He gets deployed for 2-3 months at a time. He is vegetarian but didn't feel he had a choice on his last deployment and ate meat in order to survive. Apparently the cooks put meat in all the side dishes and salads!! If it is a veggie it's got bacon in it...crazy! He would really like to not eat meat on future deployments but it is so tricky. He is going to talk to the cooks. Hopefully they can maybe give him some freezer space but I don't know if that is possible. Maybe they can provide some items for him and watch the meat output. He can have a rice cooker in his rack. What can he cook in a rice cooker that will be a suffient meal and also last at room temp awaiting to be cooked? He needs options and I am out of ideas!!

Brown rice and broccili with some teriyaki sauce! This is my go too when I have no ability to heat a lunch up.
Also, if you have a rice cooker with the abilities you can steam veggies in it, make soup, - you can even make CAKE in mine.
Can he get hot water? There are lots of those great McDougall Right Foods or other dehydrated soups that he could use. Hope these things help!

Super easy to make in a rice cooker. Very yummy and easy to build in a lot of variety. All you need is the spices, dried apricots or prunes and then you're ready to go. What's great about it is that you can make it almost entirely out of the store cupboard (tinned tomatoes, chick peas, even tinned potatoes) or with great fresh veg. Wait until you're almost ready to eat and then throw some couscous in a minute or two before you serve - the couscous will cook in the juices so you can make the whole lot in one pan.
Ditto to what Sadie said. It's really easy to keep canned beans and dried fruit, along with some grains. Add a few spices in, and you're set to go! I have a vegan friend in the military, and he's been allowed a slow cooker, so all his meals are made like that. Blees you husband's heart, he must be stationed in the South...that's how my family cooks veggies-bacon or bacon grease! :( I've always had to cook my own! Good luck to your husband, and thank him for his service. That's a tough job!
