New Vegan in Falls Church

Hi everyone, I am so excited about this new stage in my life and the Kind Diet Book is so great. My question would be: I am recently vegan but my husband will not give up meat. He is great, respects my choices, even likes alot of the dishes I prepare but only for so long. How does one keep true themselves while cooking meat dishes for the one you love?

that's a hard one! the best I can suggest is to try what a lot of the other vegan women I know have done...you cook the veggies and if they want meat with their meal they can cook the meat..it's kind of win win sometimes, either you spend more time together preparing meals (even if some of the ingredients he is cooking are yucky, time together is precious these days) or if he is too lazy to cook himself then you win by not having meat served during dinner time and he gets a healthier heart so he can live longer which means more time spent together :)

Haha..this is my problem too. I live in Fairfax, VA btw..but I am currently in Baton Rouge, Louisiana for a short time for my husband's job. Can't wait to get back. I was just there visiting family and got to dig myself out of a snow cave. LOL Anyway... I feel it is hard cooking for him now..I am DONE with handling raw meat and I feel it defeats my purpose when i am putting meat stuff in my grocery cart. But as for cooking..i have found my crock-pot has become my new best friend again. It seems easier for me to deal with cooking non-vegan for him when i really dont cook it at all lol. I threw in a piece of a beef tenderloin with some brown gravy and Herbs de Provance seasoning before I went to work last week. Done when I got home and I whipped up some vegan mashed potatoes for us both to enjoy with our different meals. So the sides i can usually make vegan..but when he has to have meat..i really dont cook it at all..i just throw it in the crock-pot and it turns out ALWAYS perfect and cooked just right.
