Do I need to refrigerate Shoyu once it has been opened? It doesn't say on the label one way or another...

Yep. Go ahead and store it in the fridge long-term, although if you need to take it on a trip or something like that, it's ok to keep out of the fridge for awhile.

Is shoyu the same as Bragg's?

Shoyu is soy sauce, so no, it's not the same as Bragg's.
