if your husband is a reader get him on Diet for a New America.
John Robbins gave up his multi-million dollar claim to the Baskin Robbins company due to his opposition of the inhumane treatment of the cows. Robbins spent years researching veganism and outlines EVERY fundamental flaw in our culture's diet. It's a really revealing read.
If he's not a reader, I doubt there's much that can be done to de/re program him, the conditioning is heavy. :-\. Lead by example :)

Welcome, Andi! I would definitely encourage you to incorporate more vegan meals in your diet. It is so worth it. I have been vegetarian (and now vegan) for over a year and I can't imagine even eating meat again. In fact, it actually kind of repulses me now. If your husband doesn't want to get on board that's okay. My BF is a meat-eater, but he eats what I cook and that's all vegan. And guess what? He loves it! Going vegan was one of the best decisions I ever made in my life. That, grad school, and my BF.
