One of my easy, go to lunches when I don't have time to cook and don't want fast food is Amy's Non-Dairy Burritos. They are wrapped in a whole-wheat tortilla with beans and brown rice. They cook up in 3 minutes. They are delish and filling. I can even find them at my local Target in the frozen food section for only $2 bucks. Can't beat it when you're on the go!

Thanks, Vanessa. I had Amy's Burritos for lunch at work this week. They are an excellent tasty answer for am easy lunch during a busy day.

Amy's Vegan Chili in cans is also good for when you are in a real hurry! I like to add steamed spinach and mushrooms to mine if I'm not too, too rushed.
Of course, both chili and burrito-filling can be easily made and frozen. If you think ahead a bit you can thaw it out beforehand and then heat, or microwave from frozen. You can even freeze the filling inside of individual tortillas! Once it's heated you can add your vegan sour cream, soy cheese, and homemade salsa :)

Amy is like my personal chef at this point. I'm eating an Amys frozen organic dinner pretty much every day during the week for lunch. I love it. Today I had the veggie meat loaf. I love the Indian and Mexican meals too. They are so filling and also very low in calories. Cannot recomend them enough!

I love them too! Good topped with green salsa and a little bit of the Tofutti Sour cream.

I love Amy's Indian Samosa Burrito. It's a once-a-week treat. I found Amy's burritos at my local Target store for $2.24. Walmart charged more than that! My local grocery chain (Albertson's) doesn't seem to sell them.

I think that's an awesome Idea. I used to prepare and freeze off meals all the time and have gotten a bit lazy with it. I have never tried freezing a burrito, but I don't see why it wouldn't work.
