I made the braised Daikon from Alicia's book as a side to my main dish, which was a Spicy Whole Wheat Linguine& Vegetable stir-fry off the Vegetarian Times website. I ended up mixing the daikon medallions into my stir fry, because they were really tasty! The recipes are both very easy and can be made in under 30 minutes.
I've been vegan for a couple of years, but this was my first time cooking/eating daikon and cooking with kombu. I was too intimidated before, so thanks Alicia for pushing me to branch out :-)
I love the braised daikon! I made it and ate it with brown rice on the side along with soy yogurt. I put some paprika and lemon juice on the yogurt and mixed it in, and ate a little bit of everything in every bite. It had a mediterranean flare to it. Love it!
