Just wanted to stop by and say HI! Just picked up The Kind Diet last night and started reading. I've been a meat eater my whole life and last year after reading the book Skinny B****, decided I did not want to eat meat anymore due to the cruelty. I gave up after 13 days, it seemed complicated and just easier to eat meat. Even though I gave up, I never really wanted to eat meat.....it was always in the back of my head. 3 1/2 weeks ago I started by cutting out red meat and pork, and only eating chicken and turkey. Although, chicken and turkey still make me gag thinking about it sometimes. The only reason I have not cut them out yet, is I'm very new to this and unsure of what to eat. I have been compiling some recipes to try and then cut out meat all together. My husband and 4 year old son are meat eaters(not my 4 year old so much) but I think with good food, they could easily be swayed to give it up. I did buy some Morning Star crumbles to try in one of our "usual" meat dishes.

Hello! I also stopped eating meat, for the last time, after reading Skinny B*tch. I feel so lucky since the same night I read it the author was as my store signing books, and I was helping out with the event. Hearing her speak and reading it that night made a HUGE impact on how I shop, think and live.Jennifer, there are so many other options. Keep on the same idea of the meat crumbles. Stop buying hot dogs and switch to soy dog or soy sausages. Same with egg in recipes; flax seeds are pretty cheap and when pureed with water makes a great substitute. (1 tbsp flaxseed to 2 tbsp water) Go soy milk or rice milk instead of cow milk and the same with cheese. Just watch out for Caesin with sometimes gets thrown into fake cheese. Also, if you're a curry fan, a little curry paste in tofu scramble is super delish! Good luck and let me know what you make. RobynPs. Look into getting a copy of veganomicon. BEST BOOK EVER!

Robyn, using the flaxseed and water........how do you use that?? Like in baking or how would a person make like scrambled "fake" eggs or something like that??
I use the flaxseed/water in baking but crumbled up tofu in a scramble.
Puree the flaxseed water combo and mix in. It has a very egg like texture that you'll be able to see right away. (it was in the Pumpkin bread recipe from the kind diet)
For scrambles I crumble up tofu and cook in a frying pan, just like how you cook scrambled eggs. Feel free to add fresh veggies and your own spices.
Sorry I wasn't very clear before. :/ I tend to get carried away when I talk about food. It's one of my great loves!
