Karen, I just saw this post now. I don't have diabetes, but I have been doing a lot of research on it because my boyfriend will be at a high risk for diabetes after his kidney transplant in a few weeks. You should buy Dr. Neal Barnard's "Program for Reversing Diabetes" it is a fantastic book! It even has recipes - all vegan.

I advocate for regular testing of blood sugar. Dr. Barnard's book is excellent but doesn't always pan out for all patients, especially when it comes to the consumption of grains. Try eating different combinations and testing postprandial. Focus on consuming large amounts of dark leafy green vegetables. Keep track and over time you will see trends. A big meal for breakfast and lunch and skipping or minimizing dinner makes a big difference. Go for a walk or get some sort of exercise after every single meal. Never ever skip the post-meal exercise. Be careful with in between meal snacking. Both type 1 and type 2 diabetics have a tremendous amount to gain with a whole, plant-based diet. Dr. Barnard is my hero.
