Leafy Greens

Hi. I am trying to determine what leafy salad greens are okay in the superhero diet. I know that Alicia says to avoid spinach (my favorite). What about arugula, and romaine? Are those okay for the superhero diet, or are they also to be avoided. Really no spinach? I have been told my whole life that spinach was good for you!

Oooops - that's what I had today, a spinach salad, I missed that (to avoid it)! (I've got sooooo much to read yet!) Then again, I know I'm waaaaay far away from superhero and that's ok! For us both! :) Maybe we can just be little heroes, eh? ;)

As I think Alicia would say (if I may be so bold!), we all have to take the steps as we can take them.

Spinach contains Oxalic acid which interferes with the obsorption of calcium. You don't have avoid it, but Alicia writes that she just doesn't make it part of her 'daily greens'. I'm still going to have it, probably moderately because I like it, but I believe romaine and arugula are okay. Hope I helped a little :)

Are collard greens and kale okay?

Yup, she specifically calls out collard greens and kale is also good.

I think it was Chard, Spinach and beet greens that you have to be careful o in terms of eating a lot.

Thanks love and everyone. Right now, I am still vegan, but I am aiming for superhero! I'm a cook, but this whole vegan/superhero wealth of knowledge was completely untouched at school. We learned french (lots of butter, cream, and cheese). Since what I love most about cooking is learning, this is such a great experience for me on that front as well. I appreciate all of your input.
