Vegan Avocado Sandwiches

Tonight, I'm fixing my vegan avocado sandwiches. I made these up myself and they're really good, quick, easy, and affordable. I use the following:

Whole Wheat Vegan Bread
Rice Pepper Jack Flavored "Cheese" Slices (these are soy & gluten free)
Avocados (I am obsessed with avocadoes. So good!)
Tomatoes (I like Roma)
Romain Lettuce
Vegenaise (the Grapeseed oil version)

I typically toast the bread and then layer the vegenaise, lettuce, tomatoes, avocados, and "cheese". I also sprinkle just a pinch of salt and fresh ground pepper on top of the avocadoes to give it a little more flavor. On the side, I add Stacy's Simple Naked Pita Chips (they are so delish!), but a yummy salad would be healthier. For dessert, I love fresh fruit like strawberries. To drink, usually water with ice and sliced lemons.

Like I said it's quick and easy and my BF loves it and he's a meat eater. He even has two! I hope you like it too!
