Eggplant Chana Masala

After seeing Alicia at the Boston Book Festival yesterday and buying the book, I spent the night cooking. The Eggplant Chana Masala is delicious and so easy to make. Tomorrow's lunch is the Nabeyaki Udon...can't wait to try it.
Great meeting you Alicia. You did a fabulous job yesterday and you seem just as beautiful on the inside as you look on the outside. Hope you enjoyed your lunch!
this was amazingly delicious. we ate half & froze the other half. it was a lot.
