Spinach?

I didn't see spinach mentioned anywhere in the book? I eat a ton of it. Am I missing something? Should I not be??

I believe Alicia doesn't each much of it since the oxalic acid binds up the calcium.
The reference is on the top of page 64.

Awesome! Thank you Kim! I read the recipes without reading the entire book first so I am gonna shut up and read it all before I bother you guys with any more questions!! Thaanks again!!

No problem. I have read the book several times now, I still find that I have questions!
