Ok, nothing fancy shmancy but so good. I found a recipe for vegan red pepper aioli, spread that on sliced bread with baby greens, tomato and "bacon". I made one for my husband (a meat and dairy eater) and didn't tell him the ingredients. He ate the whole thing! Even said "what else can we put the aioli on"? I was totally shocked and very excited! Little by little, I will "sneak" the vegan items into the menu and see what works. I consider tonight a big success.
Sure Karen! Very simple...1/2 cup vegan mayonnaise, 1/4 cup olive oil, 1 roasted red pepper and 1 clove garlic. Blend together in food processor or blender until everything is smooth. You could add salt and pepper to taste but I'm not a salt person and this was "spicy" enough from the garlic that there was no need for pepper. The red pepper I used was a bit on the small side, so I ended up adding one more small one. It just depends on how intense you want the flavor and color. *This does come out red/orange in color.
