I wanted to make Alicia's Mom's granola. However my kids have a ton of allergies. I also wanted to find a short cut for this one for a Mom with so much going on and not enough time. You don't have to be a Mom to understand a hectic schedule. So I thought I would take Bare Naked Granola the Blueberry Apple with no nuts or raisins(hence our allergies). I did roast 3-4 cups of old fashioned oats in the oven per Alicia's recipe. Then I added coconut, sunflower seeds. I didn't add the maple sugar. I added double the brown rice syrup. Also alot more Vanilla extract. I was squirting that stuff in there. And here is the thing I added coconut oil instead of safflower oil. Oh my. So good. I pressed the mixture into a cookie sheet. I mean I really pressed it. I simply put wax paper over and pressed and pressed. Well it was so good. My kids were like we don't want granola or granola bars for breakfast. Ewww! They tasted and loved it!!! They were begging me to put it in there lunches. They asked me over and over. Is this really healthy, sure its not junk food. I had told them the night before no junk in your lunch. So they were bummed. So I hope this variation helps anyone that doesn't have alot of extra time. I did this last night and let it set in the cold oven. It hardened to make a soft granola bar or granola crumble.
