Cooking for Kidney Disease

My boyfriend is in serious kidney failure awaiting transplant. He is transitioning to vegan from vegetarian, and is doing well. The only problem is that I am having a lot of trouble making healthy meals for him. He needs to avoid potassium like BAD, which means no to a lot of vegan foods. Has anyone been through this? I only have about a month to go with this, but I am trying to keep him as healthy and energetic as possible before surgery. He is losing patience feeling weak and sick (he HATES feeling that way). ALSO - he won't eat beans. He hasn't really tried any of them, but he has a problem with their texture. It is really frustrating. Any tricks for getting "kids" to eat beans? Haha

Heather - what about hummus? black bean soup? split pea soup?
