I just made Kim's Red Radish Tabbouleh, Garlic Broccoli from("Breaking the food seduction" by Dr. Neal Barnard. Yum. I made homemade hummus and warm whole wheat pita. I am so stuffed but in a good way!

I've been making the tabbouleh from TKD once a week for about a month! It's so great alone as a meal, a side dish or a quick little scoop for a snack!! Yep, love it!

Have you made the Cuban Sweet Potatoes yet? I made them last night and they are just simply FANTASTIC!!

What is TKD? And how do you make the cuban sweet potatoes? Thanks...I'm a vegan and starting the superhero this week and need easy, tasty recipes. Any suggestions for cookbooks.

TKD: The Kind Diet
This is Alicia's book with great advice & recipes for vegans, "flirts" & "superheroes." I've been waiting for over a week & a half for mine to arrive--I'm so anxious--crossing my fingers it arrives today! I saw another discussion awhile ago with a lot of great suggestions vegan for cookbooks. Check under Forums, & probably Cooking Help.

ps - the kabocha squash soup = amazing!! I made quinoa with cashews and basil and parsley - also very good! I made a variation of the radicchio pizza in the vegan section - I used an ezekiel tortilla instead of pizza crust and it was pretty good - I think I cooked it a little too long though because it was kind of bitter - anyone else know much about it?

I've actually been using organic sprouted grain tortilla's from French Meadow Bakery: http://foodbizdaily.com/articles/28932-product-hemp-tortilla-and-organic-wheat-and-sprouted-grain.aspx

I find it to be softer and really good. So when I stuck it under the broiler to toast it was good. Also, I made a great variation for Alicia's superhero "thin mushrooms pizza" recipe that's great for superheroes. Instead of a tofu cream, I refried my own beans (pinto) and spread it onto the toasted tortilla and topped it with the 3 mushrooms and chopped up cabbage. So it turned out to be a yummy taco salad :D

If you have a Whole Foods in your area, go there to get a kabocha squash. I don't think it has another name, but you can certainly use your leftover butternut squash for a soup, FebruaryGirl!
