Kabocha in my area is some times called Buttercup. Cuban sweet potatoes...yummy

Hey February Girl,


You could try pureeing the squash and create a spread in a wrap. It's really yummy.


Also, I made daikon cakes! I grated daikon and stir fried it with shiitake mushrooms and some soy sauce and formed tiny balls which I then flattened in the pan to make pancake like shapes. You could throw some of that squash puree in there too. Super yummy and so superhero ;)

I think kabocha is just a Japanese variety of pumpkin, so I use any winter squash that is on hand when I make the dishes calling for it.


Beverly those daikon cakes sound amazing!!! I need to get my hands on some shiitake today!
