Leftovers??

Hi there! I'm new to this forum and am SO thankful to Alicia for her book. I happened to stumble across at the same time I was contemplating changing my lifestyle. For two weeks I have been meat and seafood free and have never felt better! Yes, I think I had some withdrawals and headaches but now my body is adjusting. I had been diagnosed with Fibromyalgia, IBS, other bowel disorders, etc, etc... and my tummy is working perfect for the first time in 10 years!! Thank you so much:) I am working on cutting out all dairy (it's quite sneaky) and am aiming at becoming a full time superhero
Anyways, my question is: How long are leftovers good for??? For example, I made the Moroccan Couscous with Saffron and tomorrow will be 3 days it's been in the fridge. Also, the Peach Crumble also going on 3 days- but I left it out on the counter covered. My mom has always left pies and baked good out as well.... Any suggestions?? I tried googling this but everyone else's leftovers has milk and meat, so I think that's in a different category.

I haven't made these dishes but they sound really good. Since they are fresh and homemade, I don't think that they will keep well, but I am no expert. Good luck with becoming a superhero.
I was actually going to post about this myself today but I just saw Natassia's post.
I wasn't sure exactly how long things that were cooked with soymilk or tofu last. I was especially interested in the tofu cream since I'm the only one in my house that will probably eat it.
Also, can tofu, soymilk, and cheese alternatives be frozen/refrozen?

You're right about freshness. I guess I wasn't even thinking of it in that way. I really should just try to eat them as leftovers rather than trying to freeze them. Veggies always taste better fresh so I'll try to eat everything within a few days. :)
I guess I always worry about making too much since my husband will eat veggie meals sometimes but not all the time - it's mostly just me eating it.. Though I do have to say he acually loved the quinoa recipie from Alica's book - and of course so did I.
And that's a great idea about packing something and taking it with me on the road. I will be away for the weekend and I was stressing about what I would do about eating away from home since everyone else I will be with are meat eaters. Tonight I will just make a few things and pack them up to take with me. Oooh maybe the polenta casserole.
