Hi and love, Alicia and Kind Ones! I made this tonight and liked it s'much I thought it was ok to share with you - a different, "fluffier"/lighter take on hummus. Now I'm a veggie (not a vegan or superhero), and new to this - I like mine KAPOW!, and I THINK all the ingredients are cool for everyone, but this recipe is sooooo flexible, feel free to have your own fun with it:
Karen's White Bean "Hummus"
1 can Cannelini Beans (white kidney beans) rinsed and drained
about 2 Tablespoons olive oil
2 cloves garlic, chopped finely, grated or smashed/pressed
small bunch (about 1/4 Cup) cilantro (or you could use basil or parsley), chopped
a good pinch (about 1/8 Teaspoon) cumin
a good pinch (about 1/8 Teaspoon) red pepper flakes
Salt and Pepper to taste
Collect all ingredients except olive oil in food processor and blend VERY well. Then drizzle in olive oil and continue to blend until you've added enough to make a fairly light, "fluffy" consistency and all the ingredients are well combined.
If you'd like it even lighter you can add a little lemon juice. You can omit or adjust any of the spices and herbs - make it yours! :)
Enjoy!
Mmmmm! I'll make this AND regular hummus caus I am a crazy hummus lover and need some healthy, filling things to help me make great snack choices! Thanks Karen!
You're so welcome - I'm so glad you like the idea!
Woohoo, so happy and relieved - this went over GREAT with my friends here at work...I was nervous - LOL!
This sounds delicious. I eat a lot of hummus, but have been unlucky making my own in the past. I can't wait to try your version! Thanks Karen!
