What is the healthiest oil to cook with?

I recently got a cast iron skillet to cook with. I'm concerned that the non-stick coatings on pans can be toxic and i'd rather not take the chance, as i'm trying to be as healthy as possible. From what I've read about cast iron, you need to "season" it, or use oil with cooking for quite awhile to create a coating that will prevent food from sticking. I don't actually use a lot of oil when cooking because of the high fat content...so I'm wondering if anyone knows what the healthiest oil to use would be? Thanks so much!!

You NEED fats.
If you eat too low fat a diet your gallbladder will atrophy and gallstones will form.
You also need fats to absorb some vitamins
I mainly use coconut oil. :-)
Jessy thanks for that post! I didn't know you couldn't cook olive oil on high heat...whoops!
I really want to start using coconut oil since I've heard how great it is for you. I'm just worried that it will make everything taste coconut-y. Am I just being silly?
Most coconut oil is deodorized...
However some brands are full coconutty.
Walmart sells BOTH.
They have an organic coconutty flavored oil that is sold near the vitamins.
I like it for caribbean cooking

Coconut oil is hands down one of the best oils to cook with (health wise), but safflower, and olive oil are also good.
