what should I cook for a non-vegan for a date

Hello all. I am going to be cooking for a guy sometime soon and he's not vegan. I want it to be really really good, so he will know it's not just celery and carrots we vegans eat. Any suggestions?
I know for dessert I will make Alicia's chocolate peanut butter cups. They look sooo delicious!!

I would definitely put Alicia's Caesar Salad recipe on the menu!!! My husband and I made it the other night and he loved it far better than traditional caesar!!!! By the way he loves meat and eats it always but is very open to this lifestyle transition.... :) He with his own idea said he will eat vegan once a week! How rad is that!!!

I would make the Moroccan Couscous she has posted on this site. It's beyond yummy!

my husband is a meat eater as well. He liked the pecan crusted seitan (you need to marinate it overnight, just a warning i didn't realize that when i went to make it) he also liked the moroccan couscous, the peanut butter cups, and the clean mean burritos. we also made portabella mushrooms over brown rice one night with sweet potatoes on the side. portabella's are nice because they are big and juicy.
