Another Texan here...

I've been a vegan since June 2008 so I feel like I'm already "there" but it turns out I'm not really. It's a journey I'm on and this book is another stepping stone on my path, a stepping stone that I really enjoyed.

I am a single mother to two boys, ages 2 and 14 (I know! ha!). I work and take care of my home and I make the effort to really cook healthy things for us but sometimes it's a struggle.

This morning I woke early (darn time change) and made miso soup loosley following Alicia's recipe, I brought a raw veggie salad with me and a tabouli dish the was leftover from last night. I am really feeling better today despite a headache which I atribute to not drinking coffee this morning like usual.

I had taken vegan for granted by eating way to many sweets and "junk foods" and today is a new day. I'm researching whole grain recipes and what to do with the foods I have that are of superhero status. I'm excited and looking forward to this leg of my journey.

Nice to meet a fellow Texan. I know what you mean about the time change - it killed me getting up that early for work. I hope you at least live in a bigger city than I do. I miss living in Austin with Whole Foods, Central Market, the veg places to eat. Now I'm stuck in what can be considered the middle of nowhere.

Technically I live in the country. The nearest grocery store is 20 minutes away and the nearest NICE grocery store is about 35 minutes away. But there's a local farm that produces veggies and fruits so I stock up there sometimes.

Well, I'm over in the Killeen area. I haven't been to the Farmer's Market here in a long while because the last time I went there were only two farmers and both selling watermelon. I had to give them credit for the effort though. I'm gonna be working on mine & wifey's organic garden this spring and am gonna try to join in. We don't have anything but our front lawn but it's enough to do something with. Stay warm ha ha :)
