Millet Porridge and Sweet Vegetables

Okay, so I have to admit, I was skeptical about eating this dish for breakfast. It doesn't sound very breakfast-y at all. HOWEVER, I made it this morning and it is so super delicious that you have to try it. I decided to do part millet and part brown rice in my porridge because the millet at my health food store is kind of pricey. But people--seriously--it is so good. The mix of the miso and the squash with a little onion and celery, along with the sweetness of the grains. I would be happy eating it everyday. It has a tofu scramble/savory breakfast appeal (only tastier) and it is amazing. I want it again for lunch. Bravo Alicia on a great breakfast idea that I will be having all the time as a budding superhero. :)

Sounds yum! Millet is pricey at your health food store? Do they have it in bulk? Because it is the cheapest of all the grains I have found.

no, none in bulk here. it was a small box that was $4. :(

I made the Millet Porridge this morning, too! YUM! I made half the recipe, so it should've been 3 servings, but I kept going back for more, and ate the whole pot.
